crispy fried chicken tenders

Happy Sunday! I am spending my morning working out, about to watch the Broncos game, and having to work today. Next weekend is my birthday and Kevin and I are going to Colorado. It's our first flight together in the five years we have been dating! I can't believe it. I wanted to catch up on blogging so I don't try and cram it in this upcoming week.  Last week we had these crispy fried chicken tenders. French Toast Sticks in the Air Fryer

With Thanksgiving just a few days away, the easiest meal you can make is breakfast. We LOVE breakfast for dinner! These French Toast Sticks are super easy to make and a perfect add-on to your breakfast meal. The original recipe is from Insanely Good Recipes and can be found HERE . We used heavy whipping cream instead of milk. Ingredients: 2 eggs 1/3 cup heavy whipping cream 1 tbsp butter, melted 1 tsp vanilla extract 1 tsp ground cinnamon 4 slices bread, cut into thirds Syrup and powdered sugar to top Directions: In a large shallow bowl, whisk together the eggs, whipping cream, melted butter, vanilla and cinnamon. Preheat air fryer to 370 degrees.  Spray the air fryer basket with cooking spray. Dip the bread pieces into the milk mixture for one minute, flip for one more minute. Shake off the extra liquid.  Arrange them in the basket so they don't overlap. Cook at 370 degrees for six minutes. Flip and cook for three more minutes. Sprinkle with powdered sugar and syrup if you would l

Another day, another chicken recipe! This one is a Garlic Chicken recipe from Amandas Cookin and can be found HERE . Like always, I removed the salt from this recipe. We also used vegetable oil instead of olive oil, garlic powder instead of garlic and thyme instead of parsley.  Ingredients: 3 large chicken breasts, cut into cubes 1 tbsp flour 1/2 tsp ground pepper 2 tbsp vegetable oil 1 tbsp garlic powder 1 tbsp thyme 2 tbsp unsalted butter Ingredients for the gravy: 1 tbsp flour 1 cup chicken broth 1 tbsp unsalted butter Directions: Cut the chicken into cubes or chunks. Toss them with flour and pepper in a bowl. As the original recipe indicates, the amount of flour mentioned is perfect - it may not fully cover the chicken all the way or you may want to add more, but just realize the amount above is enough.  Heat the vegetable oil in a skillet over high heat until very hot - add the cubed chicken and cook in one layer about 5 minutes. Air Fryer Korean Style Chicken Breast

Chicken recipes have been our thing lately. And as mentioned before, I am super picky when it comes to chicken. This Air Fryer Korean Style Chicken Breast recipe was amazing. The original recipe  from Serious Eats is not an Air Fryer recipe - it's a grill or boiling recipe. We decided to air fry ours and what a huge difference it made. So good!  The changes we made - In place of Korean Rice Syrup, we used Sweet Cooking Rice Seasoning. We also used garlic powder instead of garlic, and removed chili peppers.  Ingredients for the sauce: 1/2 cup chicken broth 1/2 cup soy sauce 1/4 cup Sweet Cooking Rice Seasoning 1/4 cup gochujang 2 tbsp chili powder 2 tbsp sesame oil 2 tbsp vegetable oil 1 tbsp garlic powder 1 tsp ground ginger 1 tsp pepper 1 cup Sprite Ingredients for the chicken: 3-4 large chicken breasts, cut into chunks Directions: In a medium bowl, whisk together the sauce - chicken broth, soy sauce, rice seasoning, gochujang, chili powder, and sesame oil. One Skillet Bourbon Chicken without bourbon

We haven't had alcohol in the house or drank alcohol in most of the last 6-7 months so we tried to think of a non-alcoholic substitute for this Bourbon Chicken recipe. Believe it or not - Apple Cider Vinegar and Lemon Juice worked PERFECT. We switched out garlic for garlic powder, fresh ginger for ground ginger, chicken thighs for chicken breast, and brown rice for Jasmyne rice. This recipe is from  Eating Well .  I would highly, highly recommend this version below! Ingredients: 1/4 cup lower sodium soy sauce 1/4 cup lemon juice 1/4 cup Apple Cider Vinegar 1 tbsp rice vinegar 1 tbsp maple syrup (light) 1 tbsp garlic powder  1 tsp ground ginger 1/4 tsp crushed red pepper 1 pound chicken breast cut into strips 1 tablespoon cornstarch, plus 1 teaspoon, divided 2 tbsp vegetable oil 2 tsp water 3 cups Jasmyne rice Directions: Combine soy sauce, lemon juice, apple cider vinegar, rice vinegar, maple syrup, garlic powder, ground ginger, and crushed red pepper in a medium sized bowl.  Toss
