Skillet Turkey Enchilada Meatballs

Happy Halloween! I hope everyone has a fun and safe Halloween. I wanted to share a recipe while I had some time. Last night I made these Turkey Enchilada Meatballs on a cast-iron skillet. I had mine with some toast and Kevin had his with spaghetti noodles. I removed three of the ingredients and changed three of the ingredients. The original recipe comes from Recipe Runner .  Ingredients: 1 pound ground turkey 2 tbsp onion powder 1/4 cup panko breadcrumbs 1 egg 2 tbsp chopped cilantro 1/2 tsp chili powder Salt and pepper to taste 2 cups enchilada sauce 1/2 cup shredded Garlic Jack cheese 1/4 cup shredded sharp cheddar cheese Directions: Preheat oven to broil. In a large bowl, whisk together the onion powder, panko, egg, cilantro, chili powder, salt, and pepper.  Add in the ground turkey and use your hands to combine everything together. Super Easy One Pan Cheesy Sausage Pasta

Last night Jace and I put together this One Pan Cheesy Sausage Pasta Recipe and we were surprised at how amazing it was. I had two bowls of it! It literally took 20 minutes to make, super easy. We changed five of the ingredients to make it our own below. Ingredients: 1 tbsp olive oil 14oz package of Turkey Sausage or Kielbasa, sliced into 1/4 inch pieces 1 tbsp onion powder 1 tbsp garlic powder 1 15oz can of spaghetti sauce 8oz short cut pasta (we used Penne AND macaroni, uncooked) 1 1/2 cups chicken broth 1/2 cup milk 1 cup shredded cheddar cheese Directions: Cut the sausage into 1/4 inch pieces. Heat a large skillet over medium and add oil. Add sausage and onion powder to the pan and cook for 7 minutes. The sausage should start to be brown. Add in garlic powder. Mix in spaghetti sauce, uncooked pasta, chicken broth and milk.  Stir and bring to a boil. Reduce heat, cover and cook for 10-12 minutes until the pasta is cooked. Stir in cheddar cheese until melted. Enjoy! 

Chimichurri Steak Street Tacos Recipe

I love Fridays because I have more time to write blogs so hopefully today I can get two in. A few nights ago I made these Street Tacos. They were fairly easy to make and really all I did was cook the meat and prepare them but they turned out way better than I expected so I thought I would put together a blog. My sister sent us Mini Soft Taco Street Tacos Flour Tortillas from Amazon Pantry  and they were so perfect for mini tacos! I also bought three beef flaps of chimichurri to use as the meat. I poured some vegetable oil in a pan on the stove and let it sit on medium for about 3-5 minutes. I placed the three pieces of meat in the pan and let it sit for about 2-3 minutes per side. Keep cooking and use the meat thermometer until it reaches 140 for medium and 145 for medium well. Let it sit for a few minutes and then slice into smaller pieces. This past weekend was not only super fun but also super chilly. I am so thankful that it is finally reaching cooler temperatures. We are in California and we have seriously been in the 90's up to 120 degrees the past 5 months. It's been an insanely hot summer. Yesterday it was in the 70's so I decided to put together a Chili recipe in the crockpot. I wasn't actually going to do a blog on because, well, it's just Chili. But after trying it, I scrounged up the few pictures I took and decided to put together a blog. I also decided to put a list together of some of the other Chili recipes I have made so you can see those recipes below. This one I made up on my own. Chicken Chow Mein with Spaghetti Noodles

A few nights ago we were really craving Chinese Food and decided to go with Chicken Chow Mein. I've never made Chow Mein before and when I went to the market to search for Chow Mein Noodles, I thought I was solid when I picked up the can of noodles. When I got home I realized those were the crispy Chow Mein Noodles so now I had to come up with an alternative to the noodles. The past few recipes, I have found sauce packets to add to the recipe for added flavor. I happened to find one for the Chow Mein and reading the back of the sauce, it had a full recipe for Chow Mein using Spaghetti Noodles. Boyfriend definitely didn't like the idea but surprisingly, it was delicious! I eliminated some things from the ingredient list and added some things but overall, I would give it a 9/10. I wish I made more chicken and had more sauce or used less spaghetti noodles but it was still super good and something I would make again.  Ingredients: 1 package Chow Mein Seasoning Mix 3/4 cup water 3 T

Buffalo Chicken Sliders

Last night I made these amazing Buffalo Chicken Sliders by Tasty . I put the chicken in the crockpot in the morning so it would easily shred by the afternoon and then baked the sandwiches at night. Not too complicated and would definitely have these again! Ingredients: Dinner rolls (I used honey ones since they helped to balance out the heat of the Buffalo Wing Sauce) 1 1/2 cups mozzarella cheese 2 chicken breasts, shredded 12oz buffalo wing sauce 1 ranch dressing packet 2 tbsp ranch dressing 2 tbsp butter, melted Directions: In the morning, put the 2 chicken breasts, 1 ranch dressing packet and 12oz buffalo wing sauce in a crockpot on high for 4 hours. Shred the chicken and cook for about 15 more minutes.  When you are about 30 min away from eating dinner, start preparing the sliders. Spray a small bread pan or casserole dish with PAM or cooking spray. Preheat the oven to 375 degrees. Place the bottoms of the rolls in the pan. Meatball Casserole Subs

**Warning: These are SUPER messy but SUPER delicious** Yesterday I made this Meatball Casserole and turned it into Subs and it was a HIT you guys! They turned out amazing. So I used the Meatball Casserole recipe from Joy Filled Eats and we made it our own and then turned the bake into subs. The recipe calls for Ground Turkey and Italian Sausage but we couldn't find any nearby so we just used Ground Beef. We also used more marinara sauce and instead of dried minced onion and garlic we used onion and garlic powder. We also eliminated the zucchini. See our version below. Pizza Stuffed Chicken Recipe

When I first heard this recipe, I wasn't too sure on how it would be. I'm pretty picky when it comes to Chicken Breast recipes but I do love pepperoni pizza so I thought I would give it a try. The original recipe was from That Low Carb Life and I changed a few things based on our preferences. The original recipe called for 4 chicken breasts but I only made two - one each for Kevin and I. I didn't want to make too many and then waste it if we didn't like it. I also used less pepperoni slices since I used less chicken and we didn't use the parsley at the end. I would rate this recipe a 7.5/10. It was surprisingly better than I would have thought. Would I make it again? I'm not too sure on that one. Is it worth making once to try it? Absolutely.
