No Bake Peanut Butter Protein Cookies

This morning I was in the mood for something a little sweet so I made these protein peanut butter no-bake cookies from  https://www.instagram.com/madisonoking/ . I love her recipes so check her out!  Ingredients: 1 cup no sugar added peanut butter 3/4 cup almond flour 1/2 cup Vega vanilla protein powder 2 eggs 1/4 cup coconut sugar Directions: Preheat oven to 350 degrees. Add all ingredients to a mixing bowl.  Stir well to combine.  Spray a cookie sheet and scoop cookie dough into 8 balls. Place on baking sheet.  Use a fork to press down on the balls in a crisscross patterns and bake 12-15 minutes. Enjoy!

Air Fryer Bacon-Wrapped Chicken Skewers

This Bacon Wrapped Chicken Skewer recipe was super easy to make and really, really, really good. The bacon was crispy and the chicken was perfectly cooked. I will definitely be making these again. I don't use salt in recipes so I did eliminate salt. The original recipe can be found HERE .  Ingredients: 1 pound chicken breast, boneless & skinless Pepper, to taste 6 slides of bacon Ingredients for BBQ sauce: 1 tsp Extra Virgin Olive Oil 1/2 cup BBQ sauce 1/2 tsp cayenne pepper 1/2 tsp garlic powder 1/2 tsp onion powder 1 tsp dried oregano 1 tsp dried thyme Directions: Wash and pat dry the chicken breast. Cut into cubes and season with pepper. Cut the skewers so they fit in the air fryer (we cut ours in half). Place the chicken cubes along the skewers (I was able to fit 4-5 on one skewer).  With the bacon, you can cut it in pieces and add to skewers or you can do what I did and just used one piece of bacon and just thread it throughout.  In a medium bowl, combine the oil, BBQ sauc

Good afternoon! It's been awhile since I have sat down and written a blog and there are two reasons for that. The first one is because the last three weeks seem to be so insanely busier than usual and I've been working 45+ hours per week. The second is because we started using Every Plate this past week so the meals are 20-30 minutes and we are provided with the right amount of food and servings, delivered to us weekly. Because of that, I've been making those recipes compared to other recipes that I have been finding. I don't plan on creating blog posts for Every Plate but I do have some that I have from previous weeks that I will need to catch up, including this one for Pumpkin Spice Protein Balls. Swedish Meatballs Recipe

I made this recipe a few weeks ago but just now getting to write a blog about it. The original recipe can be found HERE . I always try and add a healthier touch to recipes, as much as I possibly can so my version is below. This recipe was enjoyed by my entire family, including 13 year old Jace. I love that he enjoys healthier options :)  Ingredients For the Meatballs: 1 pound ground beef, 90/10 1 tbsp Onion powder 1/4 cup whole wheat Panko breadcrumbs 1 tsp garlic powder 1/4 tsp allspice 1/4 tsp nutmeg 1/4 tsp pepper 1 egg 1 tbsp olive oil Ingredients For the Gravy: 2 tbsp unsalted butter 4 tbsp whole wheat flour 2 cups low sodium beef broth 1 tbsp Worcestershire sauce 1 tsp mustard Pepper 1/2 cup milk (or heavy cream if you have it) Directions: Combine all meatball ingredients in a bowl and mix well. Roll into 1 1/2 inch sized meatballs. Heat oil in a skillet over medium-high heat and add them in the skillet in a single layer. Brown all sides until they are nearly cooked through. Remo

Easy Snickerdoodle Protein Bites

I made another amazing recipe from the amazing Madison King HERE . Last week I made the Almond Butter Chocolate Protein Bites and that recipe can be found HERE .  I tend to snack a lot and I'm trying to be more mindful of what I have for snacks. Using Noom, it stresses eating a protein snack between 150-200 calories to fill you up. These homemade protein balls/bites are just that. These, to me, taste EXACTLY like Snickerdoodle. So, so good! I will be making these again.  Ingredients 1/2 cup Almond Butter (I use Barneys) 1/8 cup Honey 1/8 cup Almond Flour 1 Scoop Vega Vanilla Protein Powder 1 Tbsp Cinnamon Directions: Add all ingredients in a bowl.  Stir to combine. Form the dough into balls. I made 7 of them.  Put them on a plate and refrigerate for 30 minutes.  I was able to eat these 1-2 at a time, lasting all week.  Please follow Madison King on Instagram if you don't already. Healthier Buffalo Chicken Dip

Although this is a week late from Superbowl Sunday 2024, I did make this for Superbowl and it was enjoyed by my family! It was extremely easy to make and all ingredients were added to a crockpot. About a week ago I was browsing Instagram and I noticed this lady on there who had lost 53 pounds and was sharing amazing snack recipes. I found this recipe from her - hers is called Better For You Crunchy Peanut Butter Balls and can be found HERE . I am trying to lose weight and I'm also trying to find alternative snacks because I do love snacking. These protein bites I have eaten every day, 1-2 per day, since making them last weekend. I don't typically like dark chocolate (the better-for-you chocolate) so it took a minute for me to adjust to them but they are TASTY! Here is the direct video to her recipe HERE .  I have since made another recipe of hers and I also have a few more in the works. I changed a few things around compared to her recipe. We used almond butter instead of peanut butter, white flour instead of almond flour, brown rice crispy cereal instead of regular, and sugar free syrup instead of regular syrup. Pepperoni Chaffles

I haven't made a chaffle in so long that I forgot they existed. I made a Pepperoni Chaffle (different than this one) in 2020 HERE and a Cinnamon Roll Chaffle with Cream Cheese Frosting HERE .  A few days ago I made these delicious Pepperoni Chaffles and I had forgotten how delicious they are and how super easy they are to make. I pulled the recipe from HERE but didn't add red pepper flakes, I usually add the pepperoni in the mix (see below) as well as on top of the chaffle, I used whole wheat flour instead of almond flour, and Italian Seasoning instead of basil. Ingredients: 3/4 cup lite shredded mozzarella cheese 1 egg 1 tbsp whole wheat flour 1 tsp oregano 1 tsp italian seasoning 1 tsp garlic powder Pasta sauce, to top Pepperoni slices Directions: Turn the broiler on and plug in a waffle maker on while making the mixture. In a bowl, combine the cheese, egg, flour, oregano, seasoning, garlic powder, and a few pepperoni slices. Whisk together.  Pour the batter into a waffle ir

Although Instagram voted "no" for this to be a food blog recipe and I only took one photo, I decided to share anyway because these Ground Beef Asian Lettuce Wraps were so delicious. The original recipe that I used is from The Cookie Rookie HERE  for PF Changs Lettuce Wraps. I did change a few things including ground beef in place of chicken, removed the sriracha, used onion powder instead of diced onion, regular lettuce in place of butter lettuce, garlic powder instead of minced garlic, ground ginger in place of grated ginger, and no water chestnuts.  Ingredients: 1/4 cup hoisin sauce 1/4 cup low sodium soy sauce 1 tbsp rice wine vinegar 1 tsp cornstarch 2 tsp sesame oil 1 pound ground beef (we have been using 93/7) 2 tbsp onion powder 2 tsp garlic powder 1 tsp ground ginger green onions, to top 1 head of lettuce for serving Directions: Whisk together the hoisin sauce, soy sauce, rice wine vinegar and cornstarch. Well, lo and behind, I actually found his keys a little bit later on and was trying to figure out who to give them to. I decided on giving them to the front desk person, and not actually him. The next day I received a text from the guy (not sure how he got my number) and he had taken maybe 4 photos of me the night before so he sent those to me. Book Review and Summary - Prince Harry - "Spare"

I may be one of the few, but I was intrigued by Prince Harrys' story, which prompted me to pick up his book "Spare." I have to say, as I first started reading, I couldn't put it down, I think I read 50+ pages the first day. I was aware of Prince Harry but knew very little about his life. I remember negative things in the news, all of the negative stories of him. He sounded to me like the "troubled" brother, and, unfortunately, he and everyone else believed he was. I also now understand the meaning behind the book title. The name "Spare" is a name that is described as the one that isn't important. Think of a spare tire, you are kind of pushed to the side until you are needed. As Prince Harry said, his brother was the "Heir" and he was the "Spare" and it was very unfortunate events throughout  the book that describe how and why he felt like this. He mentioned Willy (Prince William) and him were, "The Heir and the Spare. I
