Shredded Mexican Chicken Burritos

I feel like the more blogs I write, the more stressful my life becomes - not because of cooking and food but just because of life and what I am going through. Kevin and I decided last night that we are no longer moving to Barstow, there are too many hurdles and just so much that we need to do in a short time-span so we decided we are staying in this area. We haven't found a place yet which is why I haven't really made any type of other announcement besides this - we are thinking we will stay in Atascadero/Paso area or on-base. Not totally sure yet but we have three weeks to decide. In the meantime, I have two positive notes: -I can't even believe this but yesterday I had 879 blog views! What!? How? -I finally won a giveaway! This morning I won a $15 Amazon gift card from a Facebook giveaway :) I'll share more life updates as I know more :) I have still been cooking and I'm not sure if that will ever change. Last night I made these Shredded Mexican Chicken Bu

How is everyone holding up? It is truly a tough time for everyone. Homeschooling has been a little bit easier this week and I only work 4 hours a day Monday-Thursday with Fridays off so life seems to be OK. But now the biggest hurdle is moving. We are probably not moving to Hesperia like we originally wanted - it may be either Barstow, Victorville, or even a possibility that we may stay in this area. Everything is up in the air right now but we are doing everything we can to get a place locked in by when we move May 22nd. Only 24 days. Eating is complicated because our roommate already put the table in storage so we are eating in our room or out on the porch. We also no longer have a couch. I'm not sure why he put everything in storage a month early but such is life I guess. I'm still cooking but things are just harder to manage. Last night for dinner I made this amazing Honey Mustard Chicken and Potatoes in the cast-iron skillet. The potatoes were probably the best I have ev

Cast-Iron Skillet Nachos using Flavor God Seasoning

Image
So the other day, I made nachos and I made a blog about it HERE . Well, last night, I made even BETTER nachos! I also added an extra touch - Flavor God Seasoning! If you haven't heard or seen these, you are missing out. I actually saw an Ad on Facebook and decided to give them a try - you know how much we love cooking around here! So the nachos below included the seasonings PLUS I made fresh Pico de Gallo (without onions but substituted for Onion Powder) so this new, amazing, delicious recipe is below! If you try this, PLEASE let me know your thoughts in the comments below. Ingredients for Pico de Gallo: 2 small tomatoes, diced 1/4 cup cilantro (estimated) 2 tbsp lime juice 1 pinch of salt 1/2 tbsp onion powder Ingredients for Nachos: 1 pound Ground beef 1/2 taco seasoning packet 2 tsp chili powder 2 tsp onion powder 2 tsp Flavor God Nacho Cheese Seasoning 2 tsp Flavor God Taco Tuesday Seasoning Tortilla chips (however many you would like) Cheddar cheese, shred

My new life in the Pandemic/Quarantine - COVID-19 2020-2021

Image
Awhile back, my grandma posted on Facebook that now would be the perfect time to write down thoughts about being isolated, in quarantine, or under a stay-at-home order, due to the Coronavirus, or COVID-19, so that others can see what life was like during this time. So....here is my version and my life being in isolation. ----------------------------------------------------------------------------------------------------------------- A few months ago, closer to the beginning of February 2020, we started hearing about this fast-spreading virus called the Coronavirus. It started in China, and, to be honest, I'm not one to pay attention much to national news, so it wasn't a huge deal to me personally. But as days went on, there was more and more talk about this virus and how so many people were getting it. By now, it had spread to other countries including Italy. I still wasn't impacted in any way but definitely paying more attention to what was going on. My Facebook and ne
