Hibachi Chicken Fried Rice

One final Sunday recipe - Hibachi Chicken Fried Rice. This was an amazing recipe. The original recipe is from All Recipes and their recipe was just fried rice - we added chicken to ours. We eliminated green onion, used less olive oil and used garlic powder in place of garlic. Ingredients: Boneless, skinless chicken breast, cut into pieces 2 large eggs, beaten 2 tbsp olive oil 1 tbsp garlic powder 2 cups cooked white rice 3 tbsp organic soy sauce Directions: Heat a wok or pan over medium-high heat. Add 1 tbsp olive oil. Add chicken pieces and stir fry 5-7 minutes or until cooked and no longer pink. Move to a plate.  Add 1 tbsp olive oil and add eggs. Cook and stir eggs until cooked through, 1-2 minutes (or less).  Add chicken back in as well as garlic powder.  Mix in cooked rice and cook until 1-2 more minutes. Add soy sauce until rice mixture is evenly coated, about 3 minutes. Enjoy!

Easy Healthy Pancake Recipe

If you are looking for a super simple, healthy pancake recipe, this is it! With only four ingredients, it can't be easier! This recipe is from Delish and can be found HERE . The only thing I changed was using 1 tsp lime juice in place of lemon zest. Turned out delish (no pun intended)! Ingredients: 1/2 cup almond flour 4oz cream cheese (we used whipped) 4 eggs 1 tsp lime juice Directions: In a medium bowl, mix all ingredients together until smooth. Let sit for 2 minutes. In a skillet over medium heat, spray with PAM or cooking spray and pour in about 1/4 cup of the batter and cook about 2 minutes. Flip and cook for 2 more minutes. The first few took a little longer to cook so if you can, let the skillet sit over the heat for 30-60 seconds before adding the batter. Serve with bacon and sausage.

Pepper Chicken

Good morning and happy Sunday! My goal today is to share three recipes with you so I can be all caught up before my sister and family comes into town on Wednesday. Today's recipe is Pepper Chicken. The original recipe from Eat Well 101 is a Pepper Chicken Stir Fry recipe. We eliminated the bell peppers, used garlic powder instead of garlic cloves, and didn't use Sriracha and turned it into just  a chicken recipe. Ingredients: Boneless, skinless, chicken breast sliced into 1 inch pieces 1 tsp black pepper 1 tbsp olive oil 3 tsp garlic powder 1/4 cup organic light brown sugar 1/2 cup low sodium soy sauce 2 tsp sesame oil 1 tsp ground ginger 1 tbsp cornstarch 1 tsp sesame seeds Directions: In a small bowl, whisk the garlic powder, brown sugar, soy sauce, sesame oil, ground ginger, and cornstarch. Butter Chicken

If you are looking for a chicken recipe that is to DIE FOR, this is it. I will just leave this recipe here .... Ingredients: Trader Joe's Organic Garlic Naan Crackers 2 large eggs Black Pepper Boneless skinless chicken breasts, sliced thin 1/2 cup unsalted butter, cut into pieces Directions: Preheat oven to 375 degrees. Place cracker crumbs and pepper in one bowl and eggs in another bowl. Dip chicken in egg mixture and then crumb mixture to coat. Arrange chicken on a baking dish.  Scatter butter around chicken.  Bake the chicken for 10-12 minutes. While cooking, preheat the Air Fryer on 400 degrees. Transfer the chicken from the oven to the Air Fryer and cook for an additional 10 minutes.  Serve with broccoli, rice and BBQ sauce. Jace added Alfredo sauce and pasta with his chicken.  Enjoy!

Air Fryer Chicken Thighs

What a long and busy week this week. Typically, I go into town or do errands once a week, if that. This week was just a constant busy week of preparing for my family to come into town and getting Jace back from his Nana's. We went to Camarillo and back last weekend, I took Jace to his first concert (TI and Nelly) on Monday, we had a cleaning lady here on Wednesday as well as a guy who put up our trampoline, and today I took Jace to get his haircut, went to the UPS store and did some returns and did a grocery pickup. This upcoming week will be busy as my sister will be staying with us so I have the swimming pool to fill up and the house to clean. Phew. I'm going to try to catch up on blogs as much as I can in the meantime. Earlier this week I made the most delicious Air Fryer Chicken Thighs recipe. Slow Cooker Crack Chicken

Crack chicken is so good (and addicting, hence "crack") so I saved this recipe to have for both lunch and dinner. I can't say it's the healthiest, but it IS delicious. The recipe I used is from Wholesome Yum and can be found HERE . It was only Kevin and I eating this one so portions were much smaller. I also used The Social Distancer from Pinch Spice Market in replace of some of the herbs and seasonings, and I used light cream cheese and reduced fat cheddar cheese to adapt to what I eat on Noom. We also did not use green onions. Ingredients: 3 boneless, skinless chicken breasts 1 tbsp Pinch Spice Market The Social Distancer 1 tbsp dried Dill Weed 1 tsp garlic powder 1 tsp onion powder 10oz Light Cream Cheese 1 cup reduced fat cheddar cheese 4 slides of bacon (cooked and chopped) Directions: In a crockpot, add the chicken breasts in a single layer. Sprinkle the chicken with the herbs and spices. Arrange the pieces of cream cheese over the chicken.  Cook the chicken for

One Pan Garlic Butter Chicken Bites and Asparagus

This is our last weekend before we get Jace back and let me tell you, it's gonna be weird to have him back. We have gone 4 1/2 weeks without him while he was in Arizona and Texas. In the 4 1/2 weeks he was gone,  Kevin and I went to lunch together several times, we went to Chili's for dinner before they closed up here, we went to a comedy show and the casino, and to the park to watch fireworks for the 4th of July. We were able to get on the same page with a lot of things, I bought Jace tickets to his first concert, we decided birthday and Christmas gift ideas for Jace, and finalized some plans when my family is here in a few weeks.  I am at my lowest weight since starting Noom (down 6 pounds) and looking forward to the future. I actually made this recipe a week or two ago but we've been pretty busy so I'm just now getting to it. This one is for a one pan garlic butter chicken bites and asparagus. Air Fryer Red Curry Chicken

If you are looking for a really simple Air Fryer Curry recipe, this is it. I was pleasantly surprised at how well it turned out. This is another recipe from our Air Fryer Recipe Book that came with our new Air Fryer (which I love, by the way!) Initially it was for Chicken Wings but we did ours with chicken breast and it worked out perfectly.  Ingredients: 3 medium boneless, skinless chicken breasts, cut into chunks 1/4 cup No Salt sweet and sour sauce  2 tsp Red Curry Paste (we got ours on Amazon) 1 tsp Organic Soy Sauce 1 tsp garlic powder Directions: Preheat Gourmia Air Fryer to 350 degrees. In a large bowl, mix the sweet and sour sauce, curry paste, soy sauce and garlic powder.  Add the chicken to the bowl and coat with the sauce. Spray the air fryer basket with non-stick cooking spray. Place the chicken in the air fryer, making sure they are in a single layer. I had to do two batches due to how much it made.  Cook for about 22 minutes, flipping halfway. Serve with brown rice. 

Air Fryer Carrots

Happy 4th of July weekend! I can't believe we are just a few days away from the 4th and still have NO clue what we are doing. Also, I wish more events happened this weekend instead of on the 4th so I don't have to miss work or go somewhere on a weekday just to get a glimpse of fireworks. The 4th is one of my favorite holidays, in Utah we would watch the balloons lift off, go to Stadium of Fire, baseball games, there was SO much to do! And we would always go to my Mom's for fireworks in their street. Since moving to California it's been...different. What do you do on the 4th? Anyways, back to the recipe. A few weeks ago our Air Fryer went out. It's been so loud the past few months and sounded like it was going to explode so we caved and bought a new one. With the new Air Fryer came a recipe book and, as you know, I love cooking. This Air Fryer Carrot recipe was found in that booklet and they were soooo good. We use our Air Fryer often but not usually for vegetables.
