Healthy and Delicious Big Mac Salad

We are on day 6 of a healthy diet and this Big Mac Salad was a HUGE hit in my house. Kevin and I loved it! The original recipe can be found HERE . Our version of the Big Mac Salad is below! Enjoy! Ingredients: 1 pound ground beef 1/2 tablespoon onion powder 1/2 tablespoon garlic powder 1/4 teaspoon oregano  1/8 teaspoon chili pepper 12 ounces lettuce and spring mix 2 spears dill pickes, diced 10 mini tomatoes, halved 3/4 cup cheddar cheese Salt and pepper to taste Dressing: 2 tablespoons tomato paste 3 tablespoons water 1/3 cup mayonnaise 1/4 cup sour cream 1/8 teaspoon ground oregano 1/8 teaspoon dried basil 1/8 teaspoon cayenne pepper 2 packs of low carb sweeter pepper and salt to taste Directions: For dressing, dilute tomato paste in water and add sweetener. I am on a roll with this healthy food kick. Last night for dinner we had these Chicken Enchilada Wraps. I'm not sure why they are Enchilada Wraps - there isn't any Enchilada sauce or anything in them. They were really different than what I have tasted before but they were healthy, good, and we added cucumbers so they were delicious. The original recipe can be found HERE . Ingredients: 1 tablespoon butter 1 large boneless chicken breast 1 teaspoon chili powder 1/2 teaspoon cumin 1/2 teaspoon garlic powder 1/2 teaspoon cayenne pepper 3 ounces cream cheese 1/2 cup shredded cheese (and more to top) 1/4 cup sour cream 5 ounces diced tomatoes 8-inch tortilla wraps (we got the olive oil kind) cucumber slices Directions: In a large skillet, heat butter over medium heat until melted. Healthy and Easy Taco Salad Recipe

This week has been a healthy-eating focus and I am down three pounds!! Last night I made this Taco Salad from Wholesome Yum . My family ate it all. Jace and I loved it with the meat warm (so right when it was done) and Kevin had it later with the meat cold and both were great! I adapted my own recipe below. This is super easy to make and took about 15 minutes total. Super easy and super delicious and healthy! If you make this, please comment below and let me know you like it! Ingredients: 1 pound ground beef olive oil 1/2 packet of Taco seasoning 8oz Lettuce (head of lettuce) Mini tomatoes, halved 3/4 cup cheddar cheese 1 medium avocado 1/3 cup salsa 1/3 cup sour cream Directions: Heat oil in a skillet over medium heat. Add ground beef and fry, breaking up the pieces until beef is browned. Stir in taco seasoning. Meanwhile, combine all remaining ingredients in a large bowl. Add the beef and toss together. Today is Wednesday and as of Monday, I am down 2.4 pounds in two days. If you have been following my blog, you probably know that my boyfriend and I love food. I love to cook. I love bacon. I love cheese. But I have also been gaining weight. SO my boyfriend and I decided we want to change up the way we eat. Yesterday I made these "Iceburgers" which are the cheeseburgers with lettuce instead of hamburger buns. There was also a little bit of ranch dressing. It was like we still had a delicious meal without the carbs. The original recipe was from Delish and our version is below. It turned out REALLY good, especially if you love cheeseburgers, bacon, and everything that goes with that! Easy Fireball Whiskey Grilled Pineapple

About a week ago, my Mom tagged me in this recipe on Facebook for Fireball Whiskey Grilled Pineapple. Without hesitation, Kevin and I went to the store and bought....whiskey and pineapple. We LOVE Fireball, that's our whiskey of choice so this seemed to fit us perfectly. I just purchased an indoor grill from Dollar General so we were able to use that for the pineapple. The original recipe was from Delish found HERE . Ingredients: Ripe pineapple, cut into pieces 1 1/2 cup Fireball Whisky 1/4 cup Pasolivo Sugar and Spice Blend (or any cinnamon/sugar blend) Directions: Cut pineapple into pieces and place in a large bowl. Add Fireball and refrigerate for one hour, stirring once after 30 minutes. Drain pineapple and Fireball. Toss in sugar and spice blend. Preheat grill to medium-high. Place pineapple on grill and cook, turning occasionally until you can insert a knife in the center, 8-10 minutes. Eat and enjoy! 

Penny Shopping at Dollar General

The past month or two I have been sharing and posting about Penny Shopping at Dollar General. Some of you may be asking, "What the heck is penny shopping?" Well, it's literally buying items that are a penny. Before I started shopping at Dollar General, I thought it was like Dollar Tree or the 99 Cent Store where almost everything is a dollar. If that was the case, I don't think I would be putting in as much effort to find pennies! But the truth is, Dollar General is still a discounted store with extremely good deals but most items are not a dollar. They have everything from clothes to accessories, home goods, food, toys for kids, birthday gifts and party items, swim items, and I personally think the items are good quality. I started hearing about Penny Shopping through the Dollar General Penny Shopping Facebook group and was intrigued by this. Does this really work? How does it work? How long does it take to find items? I was in for a real treat the first few times
