Air Fryer Teriyaki Chicken

Image
You guys! We made it through 2020! This is my final blog before the new year because I head to Utah the day after Christmas for almost a week. Well I'm glad I can end the blog off on a high note because this Teriyaki Chicken was so good. I made this for my boys a few nights ago and it did take some adjusting with the Air Fryer and all Air Fryers are different so I would look at your manual or Google the correct times for chicken for your specific air fryer. I have the Emeril one and I did three different batches in my Air Fryer. The first batch I did 370 degrees for 15 minutes and then flipped them over for 8 more minutes and the chicken was too hard. I then did 360 degrees for 15 minutes and then flipped them over for 8 more minutes and still kinda hard but better and then my last batch was 350 degrees for 15 minutes and then flipped over for 15 minutes and it was much better so you just have to kind of experiment a little bit. The original recipe was from Mommy Hates Cooking and

Meatballs Subs

Image
Last night we decided on Meatball Subs. The original recipe can be found HERE from AllRecipes . We made a few slight changes. Although messy, this is definitely one of my top favorite meals. I also made another Instagram Reel video of the subs that you can see here -  https://www.instagram.com/p/CJDEd4sgJ7s/ Ingredients: 1 pound ground beef 3/4 cup Italian breadcrumbs 2 tsp Italian Seasoning 2 tbsp minced garlic 2 tbsp dried parsley 2 tbsp Parmesan cheese 1 egg 1 sourdough french baguette 1 tbsp oil 1 tbsp garlic powder 1 jar spaghetti sauce 3 slices provolone cheese Directions: Spray a baking sheet with PAM or cooking spray. In a medium bowl, mix by hand the ground beef, bread crumbs, Italian seasoning, minced garlic, parsley, Parmesan cheese, and the egg.  Shape into 12 meatballs and place on the baking tray.  Heat oven to 350 degrees. Bake for 20 minutes or until cooked through. In the meantime, cut the baguette into thirds and then cut each sandwich lengthwise. Brush with oil, seas

The BEST Honey Soy Air Fryer Sticky Chicken Wings

Image
I have no words to describe how AMAZING these Chicken Wings were. When you look at the photos, they taste better than they look. I combined a dry rub recipe with a sauce recipe and made them in the Air Fryer. Without further ado.... The first thing you want to do is the dry rub. The original dry rub recipe was from AllRecipes HERE . We modified below since we didn't have all of the ingredients.  Ingredients: 1 tbsp brown sugar 1 tbsp chili powder (the original recipe called for paprika but we did not have any) 1/2 tbsp salt 1 tsp garlic powder 1 tsp onion powder 1/2 tsp ground mustard 1/2 tsp pepper 8-10 chicken wings/drumsticks  Directions: Whisk together brown sugar, chili powder, salt, garlic powder, onion powder, mustard and pepper. Rub on the chicken wings and get them fully coated. Arrange the chicken wings in the basket of the air fryer, standing up and leaning against each other. Air fry on 350 degrees for 32 minutes.  While they are air frying, make the sauce for the wings

Baked Ground Beef Egg Rolls

Image
I am so behind on blogs this week because I actually received some hopeful news. After 10 months of working part-time and not receiving unemployment, I was finally able to reach someone who modified my claim and used my self-employment income so I'm hoping that I can start receiving some funds. I have been spending ALOT of time this past week getting ahold of them and figuring this all out so fingers crossed!  A few nights ago I made Ground Beef Egg Rolls for dinner and I actually used the recipe on the Egg Roll Wraps. It is also below with a few modifications. I also did an Instagram Reel for them here:  https://www.instagram.com/p/CIt7mtDAr9e/ Ingredients: 1 package of Nasoya Egg Roll Wraps 2 tbsp sesame oil 1 tsp ground ginger 1 cup chopped green onions 1 tbsp onion powder 1 tbsp garlic powder 1 lb ground beef 1/4 cup soy sauce 2 tbsp sesame seeds 2 1/2 cups coleslaw (I bought the pre-packaged kind) Directions: Heat sesame oil in a large skilled. Add ginger, green onions, onion

Easy Chicken Alfredo Bowls

Image
A few nights ago I decided to make a Chicken Alfredo recipe and we ended up turning it into Chicken Alfredo bowls. They were literally SO good and I would for sure make these again! The chicken was so flavorful and the sauce was so creamy. The original recipe was from Tasty HERE . We actually just bought two different types of alfredo sauce and combined them. You can buy yours from the store or the original recipe also has ingredients for a homemade alfredo sauce as well. We had enough leftover that I even made a bowl for lunch yesterday! Enjoy! Ingredients: 2 boneless, skinless chicken breasts, cubed 2 tbsp butter 1/2 tsp dried oregano 1/2 tsp Italian seasoning 1/2 tsp Thyme 1/2 tsp salt 1/2 tsp pepper 16oz macaroni shells (or any pasta!) 1/4 cup parsley 1/4 cup parmesan cheese Two types of alfredo sauce (or one, or homemade, it's up to you!) Parsley, to top Directions: In a pan over medium-high heat, melt butter (we also sprayed the pan before with PAM spray and I think having mo

Garlic Butter Steak Bites

Image
So I initially made these Steak Bites about a week ago and they were rather dry (I always try it before I serve it) so I added a few ingredients to the original recipe from HERE and made it my own below. Enjoy!  Ingredients: 1 tbsp olive oil 3 tbsp garlic powder 1.71 pounds sirloin steak, cut into bite size pieces salt to taste 2 tbsp butter 1 tbsp parsley, chopped 2 tbsp soy sauce 1 tbsp onion powder Directions:  Heat a skillet over medium-high heat. Add 2 tbsp garlic powder and cook for one minute. Add in steak bites and cook about 5 minutes per side.  Once they are done, reduce the heat and add in butter. Stir to combine until it is melted. Add soy sauce, the remainder garlic powder, and onion powder. Garnish with parsley and serve with rice or mashed potatoes.

Thanksgiving Turkey Recipe

Image
I know I'm a little late to the game but I wanted to share our Thanksgiving Turkey recipe because I thought it was delicious. We used part of the recipe from Giada De Laurentiis HERE . We added our own twist. This was only the second time I have made a turkey (this time with most of Kevin's help) and I was pretty impressed. Our turkey was about 15 pounds I think so we kept it in the fridge three days before Thanksgiving and started the process the day before. Below is step-by-step of what we did. Enjoy! Ingredients: 15 pound turkey 8 bay leaves 2 tbsp salt 1 tbsp paprika 1/4 tsp pepper 2 tbsp olive oil 1 tbsp onion powder 1 tbsp garlic powder 1 tbsp cajun seasoning 2 tbsp butter, melted Directions: The day before Thanksgiving, remove the gizzards from inside the turkey. Dry the turkey very well using a paper towel. Create pockets around and inside the turkey and place the bay leaves inside the pockets.  In a small bowl, mix together the salt, paprika and pepper. Season the turk
