Quick and Easy Sloppy Joes

This Sloppy Joe recipe was supposed to be made a few nights ago...but we made tacos instead! So, we had them tonight. We made a lot of substitutions - and I actually made these while talking on the phone to my sister so I didn't take very many pics! Pretty good, super easy. We didn't add the onion or bell pepper. I used Tomato Paste, Water and Marinara Sauce as a substitute for Tomato Sauce. Very easy if you are looking for a simple recipe to conquer the quarantine. The original recipe was found HERE . Ingredients: 1 Tbsp olive oil 1 pound ground beef Salt and Pepper, to taste 1 tbsp garlic powder 1 Tbsp onion powder 1 12oz can of tomato paste 1/2 cup water 1/4 cup marinara/spaghetti sauce 1/4 cup ketchup 1 Tbsp worcestershire 4 hamburger buns Directions: Add the olive oil to pan over medium high heat. Add the beef and break up into small pieces until there is no pink.  Add salt, pepper, garlic powder, and onion powder and mix. Stir in the tomato paste, water

Homemade Baked French Toast

Yesterday as a Sunday morning breakfast, I decided to make this French Toast. Not healthy, I know, but while stuck in quarantine, somethings gotta give. I don't think I have ever baked french toast before but there is a first for everything. I really enjoyed them with some sugar-free syrup. The original recipe can be found HERE . I used regular bread instead of a loaf of Italian bread and used Monkfruit instead of sugar. Enjoy! Ingredients: 8 pieces of white bread 5 eggs 1 1/4 cup whole milk 1/2 cup Monkfruit 2 Tbsp cinnamon 1 tsp vanilla 4 Tbsp butter, melted For topping: Powdered sugar Sugar free syrup Directions: Preheat oven to 350 degrees. Grease a loaf pan. Place 4 pieces of bread one-behind-another and do that on both sides of the loaf pan. In a large bowl, mix the eggs and milk to combine. Cinnamon Roll Chaffle with Cream Cheese Frosting

Guysssss I made these Cinnamon Roll Chaffles over the weekend, and they took forever to make. I'm also sad because, of course, I didn't have all of the original ingredients. I'm pretty sure this happens to me every single time I make a meal. The frosting was pretty much only cream cheese which was good but wish I had non-expired heavy cream :/ The original recipe was from Delish HERE . Chaffles are a part of the Keto diet. I'm still trying to eat healthy while quarantined but it's tough. In fact, boyfriend is on his way to order pizza right now :/ It's all about balance right? In this recipe, I made a few changes from the original - I used coconut flour instead of almond flour, regular milk instead of heavy whipping cream, and monkfruit instead of swerve. 20 Minute Juicy Oven Baked Chicken Breast Recipe - Super Easy

On a scale of 1-Easy, this is probably one of the easiest chicken recipes I have made (besides the crockpot recipes that you just leave in until it's done). This one does have a few steps to it but you will probably have all of the seasonings in your pantry and the chicken was done in 20 minutes. This recipe originally was from HERE and our version is below. When I say this is juicy chicken, it *really* was! And after it was cooked, I took some of the sauce in the pan and poured over the chicken and it made it even better. We also added asparagus and white rice as sides. Ingredients: 2 boneless, skinless chicken breast olive oil 3 tbsp brown sugar 1 tbsp chili powder 1 tsp salt 1/2 tsp pepper 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp cumin Directions: Preheat oven to 425 degrees. How is everyone dealing with the quarantine? I am OK, I feel like my anxiety has been pretty high these past few days and trying to stay inside as much as possible. Every time I do go out, I get social anxiety. Anyone else feel this way? This recipe was not mine - I actually saw it in a Facebook group I'm in (I don't have the link or else I would share it) - but I did adapt it to a low carb style. Super easy and quick, especially while the kids are at home. It is literally done in 10 minutes! Ingredients: Carb Balance Tortillas Spaghetti/Pasta Sauce Mozzarella Cheese Cheddar Cheese Pepperoni Slices Italian Seasoning Directions: Heat oven to 350 degrees. Spray a pan. Use the tortilla as "crust" and place your sauce, cheese, and toppings on it. Bake for 10-12 minutes. Enjoy!! 

Oven Baked Tri-Tip with Marinade + Asparagus

How's everyone dealing with the "lockdown" and "quarantine" situation?? I hope everyone is OK. Today is the first day that I drank alcohol beverages and, I have to say, it's rather nice and much needed. Anyways, tonight I made a tri-tip, asparagus and mashed potato recipe. I actually marinaded the tri-tip two days ago. On Tuesday I ordered Instacart and the store didn't have ground beef or turkey so I purchased a tri-tip and a roast (limit two meats per family). I put this in the refrigerator and marinated it on Thursday and then baked it in the oven today. The tri-tip I purchased was 4 pounds and most of the recipes were 2-3 pound tri-tips so it took a little bit longer to cook. It ended up a tad bit chewy but I love the burnt ends and I still thought it was delicious. The roast recipe was combined using African Bites Recipe and Baking Mischief's Recipe . Layered Ground Beef Taco Salad

If you follow me on Facebook , yesterday I did a Facebook Live of me attempting to go to the grocery store. All I needed was ground beef and ground turkey. Well, still being in the middle of quarantine, I went inside to Grocery Outlet and found a small tube of ground turkey. I was SO excited you guys! I then looked up, and realized there were larger tubes of ground turkey! Even better! I got home and was going to make this delicious Taco Salad...I cut open the ground turkey....and it's rotten ðŸ¤®ðŸ¤® It looked fine but literally smelled like rotten eggs. I called them right away and let them know that I was there just hours before and just went to make it and it was bad - and the expiration showed a few weeks away. The cashier told me to bring in the meat and the receipt and they could refund the money. WELL I pack all of the meat up in three bags because I didn't have a bag big enough for all of it and I take them in with me to Grocery Outlet. I luckily end up in the line with th

Crockpot Beef Pot Roast

Tonight for dinner we had beef roast in the crockpot. I ordered Instacart yesterday and the driver/shopper told me a few startling things: 1. Smart and Final only allowed one person in the store at a time 2. You could only purchase two 6-pack of waters 3. You could only purchase two types of meat (and they were out of ground turkey and ground beef) I had him pick up a beef roast and a tri-tip to hold us over. But what a world we live in at the moment! Unfortunately both times I made trips to the grocery store, they were out of potatoes so this roast was without potatoes and onions. I replaced the onions with onion and garlic powder. I also used an 8oz container of beef broth instead of 1/2 cup. Super easy and delicious with toast! The original recipe was from YUMMLY here .
