Turkey Spaghetti

If you are looking for a healthier spaghetti option, this would be it. This is turkey bolognese over spaghetti from Noom and I have to say, it was pretty delicious. I did make a spaghetti and meatball recipe the other day but this one is mainly ground turkey with a homemade spaghetti sauce. Both were tasty! Kevin and I had this dinner last night and him and I cleared our plates. I did not add green bell pepper and exchanged onion and garlic for onion powder and garlic powder. I also replaced sugar with monkfruit and used whole wheat spaghetti noodles instead of regular spaghetti noodles. Feel free to use more spaghetti noodles depending on the people you are serving. I only prepared three meals so I didn't use 12oz of noodles like the recipe called for. Healthy Brownies - Noom Recipe

Wow, what a week. I am so happy it's Friday, let me tell you. I just spent 5 hours doing errands today and it was way overdue - oil change, recycles, groceries, CVS, the UPS store. I'm exhausted but feel so accomplished today.  Big changes have happened in my life lately including switching to Noom for my recipes and diet. This recipe was from Prevention magazine in the Noom app and it was for brownies. Now, these brownies are not going to taste like regular brownies because they are healthier. This recipe takes some time so I will say that in advance. It has a lot of ingredients and most are whole wheat or healthier so it does take a second to adjust to it, Jace and I both really liked it. I used onion powder instead of onions, The Social Distancer instead of garlic and parsley, used whole wheat spaghetti noodles and breadcrumbs, and monkfruit in replace of sugar. I also removed the salt. Ingredients: 1 tbsp onion powder 2 tbsp The Social Distancer (garlic, chili flakes, basil, parsley, and salt) from Pinch Spice Market 2/3 cup whole wheat bread crumbs 1/4 cup milk (preferably fat free) 1 egg, lightly beaten 2 tsp Italian Seasoning 1/2 pound ground beef 1/2 pound ground turkey 2 tsp olive oil 2 can tomato sauce 1 can diced tomatoes 2 tbsp monkfruit 2 tbsp Italian Seasoning (for the sauce) 12oz whole wheat spaghetti noodles Directions: Coat a large pan with nonstick spray. Noom - Baked Chimichangas

I started Noom on April 1st, so almost 3.5 weeks ago.  Successes: *Down 3-4 pounds on average *Can fit into shorts that I couldn't fit in pre-Noom *Down from 2 coke zeros per day to 1 *Eating better, healthier, and being more aware of my food choices *Decreased body fat and BMI *Went from 3 protein bars per day down to 0-1 (thanks sister for recognizing this!) If you haven't tried the Kellogg's Corn Flakes Crumbs as a chicken breadcrumb, you are missing out. They are so delicious! This recipe for Cornflake Crusted Baked Chicken is originally from Country Living and can be found HERE . I definitely revamped this recipe and we eliminated salt because we don't eat a lot of salt.  Ingredients: 1 tsp garlic powder 1 tsp Pinch Spice Market Finger Lickin' Chicken 2 1/2 cups buttermilk 1 tsp celery seed 1/2 tsp cayenne pepper Ground pepper 2 large boneless, skinless chicken breasts, cut into chunks 1 cups flour 4 cups Kellogg's Corn Flakes Crumbs Directions: Combine garlic powder, 1 1/2 cups buttermilk, and 1/2 tsp celery seed and cayenne pepper. Preheat oven to 425 degrees. Add chicken and marinate in the fridge for 30 minutes.  In a pot or big bowl, combine flour, pinch of cayenne and remaining 1/2 tsp celery seed. Another day, another chicken recipe. I used to be so picky about chicken but it seems like that's all we eat now. This recipe is for Baked Sesame Chicken Bites, initially from Clean Food Crush and can be found HERE . We switched out gluten free flour to regular flour and eliminated salt as we don't use salt often. Ingredients for the chicken: 1 pound chicken breast cut into cubes Ground pepper to taste 1/4 cup flour 3 eggs 1 cup parmesan cheese 1 tsp onion powder 1 tsp garlic powder 1/4 cup Sesame seeds (if you would like) Ingredients for the sauce: 1/2 cup coconut aminos 2 tbsp rice vinegar 1/4 cup honey 1 tbsp sesame oil 1/2 tsp red pepper flakes 1 tbsp cornstarch 2 tbsp water Directions: Preheat oven to 375 and spray a large cookie sheet with PAM or cooking spray. It's been awhile since I've consistently blogged, I've been working more than 40 hours per week, my sisters being in town, out of town to visit family, and Jace's spring break. We made this oven fried chicken quite awhile ago (March 6th to be exact!) and it's another recipe from NW Kidney (my fav!) and can be found HERE .   Ingredients: 1/4 cup unsalted butter 1/4 cup corn oil 1/2 cup flour 1/2 cup cornmeal 1 tbsp paprika 1 tsp pepper 1 tsp ground mustard 1 tbsp dried tarragon 1 tbsp dried marjoram 1 pound boneless, skinless chicken breast, cut into pieces Directions: Put butter and oil in the bottom of a pan. Heat oven to 425 degrees. Put pan in the oven to melt butter and oil. While that is melting, put 1/2 cup flour and 1/2 cup cornmeal in a big pot.  Add seasonings.  Drop pieces in and shake. Lay chicken pieces, skin side down, in hot oil in pan.  Bake 30 minutes. Turn over and bake 20-30 more minutes.  Serve with potatoes and broccoli. This recipe was 5-Stars!

Air Fryer Chicken Parmesan

Well it's been awhile since I've blogged. These past 2-3 weeks have taken so much out of me. We went down to Camarillo to visit Kevin's brother, sister-in-law and their 3-month old who is so dang cute. And my sisters have been in town this week so it's been family time lately.  A few weeks ago I made this Air Fryer Chicken Parmesan which was so good! I'm actually using Noom now for recipes so my recipes will be changing a bit. This one was good though and on the healthier side with an Air Fryer. The original recipe can be found HERE . We eliminated salt (everything we buy is low sodium if possible) and used mozzarella cheese instead of parmesan cheese. Ingredients: 2 large boneless skinless chicken breasts, cut in half  lengthwise 1/2 cup flour 1 tsp garlic powder 1 tsp black pepper 2 eggs, beaten 1 1/2 cups shredded mozzarella cheese  1 1/2 cups panko breadcrumbs Lower Sodium spaghetti sauce 8oz Fettuccine noodles Directions: Preheat your air fryer to 400 degrees.
