Chicken Parmesan with Pasta in the Cast-Iron Skillet

I haven't been feeling too well the past few days but still managed to make dinner tonight (last night we did Taco Bell - I know, so much for a diet! But I still am almost at my lowest weight since June 28th so a little taco didn't hurt). Tonight we had Chicken Parmesan with Pasta in the Cast-Iron Skillet. The original recipe was found HERE and our own version is below. There are three appliances that I LOVE and I know I have mentioned this before - my crockpot, my cast-iron skillet and my air fryer! Such is life as an adult, right?! Anyways, this recipe wasn't super hard and not at all time consuming. It took me maybe 30 minutes to make this. I would say difficulty level was Medium. It required more steps but not a lot of time. I will definitely be making this again. I especially love the pasta! We only had macaroni shells and it worked perfectly. I cooked it to tender and just added Parmesan cheese, vegetable oil, and pepper. I laid the chicken on top of it. Deliciou

One-Pan Healthy and Easy Sausage and Veggies

Do you guys know how hard it is to maintain blog posts and trying to get everything done in a week? It's very tough but so worth it! I love the fact that I can go back to my own recipes and make them again :) This one I made about a week ago. It's super easy and pretty healthy. Plus it is pretty filling for it just being veggies and sausage. Super easy, super delicious. Let me know if you make it and if you like it! I pulled the recipe from two different sites - HERE and  HERE but ours is quite different. If you try all versions, let me know the pros/cons and which one you like better! Ingredients: - 6 tablespoons vegetable oil - 1/2 tsp roasted garlic powder - 1/3 cup Parmesan cheese, grated - 3 large brown potatoes, chopped into smaller pieces - A bunch of asparagus, cut in half - 13oz smoked sausage link, cut into pieces - 10 small baby carrots, cut into pieces - 2 tsp Italian Seasoning Directions: Preheat oven to 400 degrees. Creamy Baked Macaroni and Cheese

This recipe blog post was created for my fellow carb lovers. As most of you know, on June 28th of this year, I decided I wanted to change my life and my diet and started to eat healthier. As of today, I am at my lowest weight since the end of June and I'm down 7.3 pounds! If you look at my recipe blogs from last year or even before June, it was recipes full of carbs and deliciousness! Since then, I've only maybe a handful of recipe blogs that aren't healthy. This being one of them. I did know ahead of time that I was making this so I did try and balance it out by going to the gym before cooking. It seemed to work because I'm still losing weight. Life is about balance, right? I also have to realize at times that my boyfriend and son aren't on the same diet I am although they do love what I cook. The past few blogs I have been writing on the weekends and I have to say, it seems to workout better that way! Life is too busy during the week - between me working, helping Jace with homework and cooking dinner every night, it's hard enough to do all of that. But at least cooking during the week gives me some wonderful blogs to write about on the weekend :) A few nights ago we made this Turkey Taco Chili Macaroni - I took the recipe from Skinny Taste but made it our own below. This definitely tasted better in the cast-iron skillet. Breaded Air Fryer Chicken Tenders

I didn't realize until after I had planned this blog, that I have already made a Chicken Tenders in the Air Fryer blog HERE . This one contains different ingredients so I'm OK with creating two blogs about Chicken Tenders. PLUS in case you haven't noticed, I use my Air Fryer A LOT! Like 2-3X per week. This recipe originated HERE and is for Breaded Air Fryer Chicken Tenders. So tasty and delicious. My full recipe is below. Ingredients: 4-5 skinless chicken breast sliced into strips (or "tenders") 1/3 cup mozzarella cheese 1/3 cup breadcrumbs 1 egg 1/4 cup flour 1 teaspoon Italian Seasoning olive oil Directions: Place the breadcrumbs, eggs, and flour in separate bowls. Add the shredded mozzarella cheese and Italian seasoning with the breadcrumbs and stir. Coat the chicken tenders in flour, then egg, then breadcrumbs. Use a towel and wipe down the Air Fryer basket with olive oil. Add the chicken tenders to the Air Fryer basket - 4 at a time.

Keto Fat Head Pizza Crust - Pepperoni and Two Cheese

When money runs low, you resort to creating recipes using things you already have in your cabinets. I decided to make this Fat Head Pizza Crust (which I have made before) but was a little bit hesitant because I had to substitute two of the items in the original recipe. Even with the substitutes, I LOVED this pizza crust! It was amazing. So yes, you can make this based off of what you already have at home. And if you don't have pepperoni slices, just make a cheese pizza! I was lucky enough to have marinara sauce, a few pieces of pepperoni and two different types of cheeses to use for the topping but you can top the crust with whatever toppings you would like. Teriyaki Chicken Drumsticks in the Air Fryer

When my Nana and Papa came over last Sunday and I told them I use my Air Fryer 2-3 times per week, I wasn't kidding. In fact, my last three blogs have been Air Fryer dinners. She gave me the Emeril Air Fryer earlier this year and I use it All. The. Time. Tonight we had an early dinner of Teriyaki Chicken Drumsticks in the Air Fryer and they were delicious (like everything we have made in the air fryer!). The good thing is you can basically make anything in the Air Fryer - macaroni and cheese, chicken breast, chicken thighs, chicken drumsticks - and my Nana said she has even made a cake!  I actually followed this recipe from Craving Tasty almost to a "T" for these Teriyaki Chicken Drumsticks in the Air Fryer here:  https://cravingtasty.com/air-fryer-chicken-legs/ . Easy and Delicious Chicken Parmesan in the Air Fryer

I can't say it enough about an Air Fryer - literally the best! I use it probably twice a week. Initially I wasn't going to write a blog post about our delicious Parmesan Chicken dinner last night, but after eating it and seeing it and smelling it, I decided to last second :) We had ours with French Style Green Beans and rice. The original recipe was from Skinny Taste (I can't link the recipe because the website isn't working correctly). Ingredients: 6 tablespoons breadcrumbs 2 tablespoons mozzarella cheese, shredded 1/2 cup marinara sauce 2 tablespoons shredded parmesan cheese 2 chicken breasts, cut in half Directions: Preheat Air Fryer to 400 degrees (I use the Emeril Air Fryer) and let it run for about 10 minutes. While its preheating, slice a chicken breast in half. Combine mozzarella cheese and breadcrumbs together in a small bowl. Melt butter in a bowl for 30 seconds. Dip one piece of chicken in butter and breadcrumb mixture. Place in a bowl in the Air Fr
