Crispy Chicken Parmesan Bake and Cast Iron Skillet

Image
I finally invested in a Cast Iron Skillet. I went to Target the other day to get it and the lady at the cash register asked if this was my first Cast Iron Skillet, as if it were a child. She said I would love it and I can make anything in it. The first thing that I made was this Chicken Parmesan Bake. I loved it! I made it more like four individual chicken pieces but you can overlap them in the pan and turn it into an actual bake. The original recipe was found in my Tasty recipe book but it can also be found online HERE . Ingredients: 2 boneless, skinless chicken breast salt pepper onion powder 1 cup flour 2 eggs 1 cup breadcrumbs 2 cups marinara sauce mozzarella cheese, shredded or slices 1/2 cup parmesan cheese basil vegetable oil for frying Directions: Cut the chicken breasts in half widthwise to make four thin breasts. Season the chicken with salt, pepper, and onion powder. Coat the chicken in flour, then eggs, then breadcrumbs.  Pour oil

Mediterranean White Chicken Enchilada Recipe

Image
Although I have been trying out the Nutrisystem diet, I couldn't help but have a taste of these Mediterranean White Chicken Enchiladas. And.....I even had seconds. Luckily I didn't feel too guilty as the sauce was made from Greek Yogurt and other ingredients and not a Marinara or red sauce. I was a little leery when I started cooking it but I have to say these were really really really good. Here is the original recipe: https://diethood.com/mediterranean-white-chicken-enchiladas/ We aren't a "pepper" family so we did remove those but I did use some Red Pepper Flakes and it tasted just as good :) Ingredients: olive oil (as much as needed) 3-4 cups shredded chicken 2 cups cheese (any type of shredded cheese that you prefer) 8 flour tortillas red pepper flakes 3 tablespoons butter 3 tablespoons flour 2 cups chicken broth 1 cup greek yogurt (I just used vanilla) pepper 1 teaspoon Italian Seasoning (from the packet) parsley Directions: Preheat oven t

Last night's dinner was delicious Garlic Butter Steak and Potatoes. I had Steak Strips already thawed out and a few potatoes left over so this was perfect! The full recipe could be found HERE . We made our own recipe and everyone loved it here: Ingredients for steak and potatoes: Flank steak potatoes, quartered olive oil (as much as needed) 3 tablespoons butter Garlic Powder Herbs (Rosemary, Oregano, Basil) Fresh pepper Red Chili Pepper Flakes Ingredients for the marinade: 1/3 cup soy sauce olive oil fresh cracked pepper Directions: In a large bowl, combine the steak strips with soy sauce, olive oil, and pepper. The BEST Macaroni and Cheese you will ever have!

Image
On Monday night I asked the boyfriend if Macaroni and Cheese sounded good to eat because I didn't feel like cooking a huge meal. He said yes BUT he wanted to try a different kind of Mac and Cheese - baked. I don't think I've ever had baked macaroni before but thought it was worth a shot. The original recipe can be found HERE . To be honest, I was looking for an easy meal but this was NOT an easy recipe. But I have to say this was the most AMAZING Macaroni and Cheese I have EVER had. I'm not even kidding. So if you have some time and want to make a delicious meal (we had plenty leftover!) then try this Macaroni and Cheese! Ingredients: 1 pound elbow pasta 1/2 cup butter 1/2 cup flour 1 1/2 cup milk 2 1/2 cups half and half 6 cups colby jack cheese, parmesan cheese, and mozzarella cheese, shredded Salt Black Pepper 1/4 tsp Paprika Instructions: Preheat oven to 325 degrees and grease a baking dish. Jace-isms - Wisdom from my son from ages 8-13

Some people take their kids quotes and put them on Twitter. Instead, I chose to put mine in a blog post. This perfect slow cooker roast on a rainy and chilly day

Image
I went to Target yesterday and purchased a roast since it's been awhile. Little did I know that it would be raining all day so the slow cooker roast worked out perfectly in my favor. Plus it was SUPER easy to make. The only thing that I dislike about Target meat is the fact that I tend to either buy already expired meat or meat that has A LOT of fat on it. Unfortunately, this roast did have a lot of fat on it so I think I only ended up with a pound and a half of meat. The original recipe called for two to two and a half pounds of meat. Still was enough for the three of us to enjoy :) Here is the original recipe:  https://cleanfoodcrush.com/slow-cooker-roast-beef-clean-eating/?fbclid=IwAR368fsHyZ_t9SiwdKx5YAsBtjmw3oj0gM8SKvebj7d_0XRMjyJRdPf95Js Ingredients: 1.5 pound Beef roast Onion powder (as much as you would like) Two big potatoes, cut up into pieces 2 cups Chicken Broth 1 Tbsp Worcestershire Sauce Paprika (as much as you would like) Pepper Directi

Dreams 2019

1/2/19 I had a dream that I was a teachers assistant for I think Seniors? We were in like a dorm though and this couple was talking about collecting rent from each other. I told them that if they collect money, we will find out and they will be in trouble. This other kid was doing a presentation and went to the front of the class and said he was circumcised. Then I sat down and accidentally shot this arrow thing behind me when the teacher was talking and it hit a guy in the arm and everyone noticed. Then I ran into a spiderweb and thought there was a spider on me. I went through and took my jacket off and was freaking out. I had a dream that britanee haymond invited me to the mormon church. I said yes and jokingly asked if I had to give a speech or share my testimony. She encouraged it so I spent a week writing out what I was going to say. It ended up being 10 pages long. During church, I arrived with Amanda and my Dad was there too! Britanee and her sister Ashlee were so excited to
