Chicken Marinade for BBQ Chicken and Grilling

Yesterday we decided to grill some chicken. We are lucky enough to have a nice BBQ across the street from our house and we have used it three times in the last few weeks. Before grilling, I put together a marinade for the chicken and let it soak up for about five hours prior to grilling. The original recipe can be found HERE but we made some changes (and some recommendations) below. Ingredients: 1/2 cup vegetable oil 1/2 cup Pasolivo Aged Balsamic Vinegar (Highly recommend!!) 1/4 cup soy sauce 1/4 cup Worcestershire Sauce 1/8 cup lemon juice 3/4 cup brown sugar 2 tsp dried basil Salt, to taste Pepper, to taste Garlic Powder, to taste Directions: Combine all ingredients in a bowl and whisk. Put chicken in the bowl OR you can divide the chicken and marinade in individual bags and let sit for 4-24 hours in the fridge. One Pot Chicken and Broccoli Pasta

So, a funny story. Yesterday my cousin and I were talking about all of the non-healthy food recipes that have been on my blog and thought we should rename my blog "Cheese and Carbs" or "Carbs and Cheese" and then, all of the sudden, I make a decently healthy recipe. I made this recipe a few nights ago from Tasty (which, by the way, I LOVE their recipes! I even have their cookbook) and it's a One Pot Chicken and Brocolli Pasta. Yes, this does have cheese, but overall, it's chicken and brocolli. I feel like this is one of the better recipes I have made. Ingredients: Vegetable Oil 2 chicken breasts, cubed 1 teaspoon salt pepper, to taste onion powder, to taste frozen broccoli, half a bag 3 cups milk 12oz bowtie pasta 1 cup parmesan cheese, shredded 1 cup mozzarella cheese, shredded More cheese on top Directions: Heat oil in a big pan. Four Cheese Penne Pasta Bake

I have to say that I have never been a huge fan of Penne Pasta. But if you pair it with cheese and sausage, I'm all in! This Four Cheese Pasta Bake was so heavenly! The original recipe can be found HERE . Our new version is below. Enjoy! Ingredients: 1 pound Penne Pasta 3/4 pound Smoked Sausage Crushed Red Pepper Onion Powder Vegetable Oil 1 jar (24 ounces) marinara sauce 1/2 of a small bag of four-cheese blend Directions: Heat oven to 450 degrees. Cook pasta according to package directions and drain. While cooking pasta, cut sausage into 1/2 inch slices. If you have a large pan or skillet, you can use that for the sausage and sauce. Pour olive oil in pan and add the sausage. We had random Crushed Red Pepper packets and I poured two on the sausage. You can also used Crushed Red Pepper seasoning. I also added a few tablespoons of Onion Powder but feel free to use as much as you want. Cook the sausage until it's done. Add the Marinara sauce and bring to a simme

Tator Tot Casserole with Bacon

This Tator Tot Casserole is quite different than the other version I posted about HERE . The other one is more of a basic Tator Tot Dish where this one is more flavorful. This contains Condensed Cheddar Soup, Sour Cream, and Cream of Chicken Soup as well as American Sliced Cheese to make it extra cheesy. We also added our specialty, bacon on top :) The original recipe for this Tator Tot Hotdish can be found HERE . Our version of this dish is below. Ingredients: 32oz package of Frozen Tator Tots 1 pound ground beef Onion Powder (as much as you would like) 1/2 teaspoon garlic powder 1/2 teaspoon pepper 2 Teaspoons Worcestershire Sauce 1 can Condensed Cheddar Cheese Soup 1 can Cream of Chicken Soup 1/3 cup Sour Cream 5 slices of Bacon (cooked beforehand) 3 slices of American Cheese + 1 cup shredded cheddar cheese (optional on top after it's all done) Directions: Preheat oven to 350 degrees. Sweet Pork Carnitas in the Crockpot

If you are looking for a meal that you can leave in the crockpot and not worry about until dinnertime, the Sweet Pork Carnitas is perfect! I put all ingredients in the crockpot and put it on low for 6.5 hours. Once it was done, I took two forks and shred the pork and then placed in small Street Taco flour tortillas and corn tortillas. I topped them with cheese and sour cream. Super easy! Ingredients: 1 teaspoon ground sage 1/2 teaspoon salt 1/4 teaspoon pepper garlic powder 1 cup water 2 pounds pork tenderloin 1/2 cup brown sugar 1 tablespoon cornstarch 1/2 cup balsamic vinegar 2 tablespoons soy sauce Did you make these? Baked Chicken and Sour Cream Enchiladas

Tonight's dinner was Baked Chicken and Sour Cream Enchiladas. I prepared the Chicken in the crockpot about three hours before. I mixed it with Beef Broth, 1/2 Enchilada Powder Packet and one Onion Powder Packet and cooked it on High for 3.5 hours. Once it was done, I took it out, used two forks to shred the chicken and then mixed it with the ingredients below. The initial recipe can be found HERE . Ingredients: Two medium boneless chicken breast (shred beforehand) 1/2 enchilada powder packet Onion powder (as much as you would like, I did about 2 tablespoons) 1 1/2 cup sour cream 2 cups beef broth 1 1/2 cups Cheddar Cheese 7-8 flour tortillas 2 (10 oz) cans of Enchilada Sauce (we did mild) Directions: Once chicken is done and you shred, preheat oven to 350 degrees. Whenever I think of Sloppy Joe's I think of my childhood. I can't remember if it was church camp where we had them or just a part of our weekly family dinners at home (or maybe both) but they bring back a lot of great memories. Kevin sent me a recipe on Friday and *thankfully* I had all of the ingredients already at home except the meat. This recipe was actually shorter than what it said and the Sloppy Joe's turned out really really good. Easter on a Budget - Baskets and Egg Fillers from Dollar Tree

Shopping for an 8-year old boy is tough. And shopping for an 8-year old boy on a budget is even tougher. This Easter I put Kevin and I on a budget of $16 to fill Jace's Easter basket as well as filling the plastic eggs. Keep in mind that I did purchase his Easter basket and a few things for his basket earlier but I really wanted to focus on what I purchased specifically on a budget. I went to the Dollar Tree with an open mind. I knew I could find decent-quality items for an 8 year old but wasn't sure what to expect. This boy loves Spongebob, superheroes, drawing/writing, sports, and games. I didn't want to go to the Dollar Tree to just find cheap things. I actually wanted to find things that he would use and like. I spent probably an hour there but I did find some great things. Sweet Chili and Juicy Honey French Baked Chicken Breasts

When all you have in your freezer is boneless chicken breasts, this is the perfect recipe to make with them. It looks like a lot of ingredients but it was really easy and simple to make. And it was delicious. We added white rice with butter and pepper and it was the perfect meal. The original recipe that we found this from is HERE . Ingredients: 4 boneless skinless chicken breasts 1/2 cup vegetable oil (or olive oil) 1/2 cup honey 1/4 cup apple cider vinegar 1/4 cup sweet chili sauce 1 tablespoon Worcestershire sauce 1 pack of dry onion soup mix salt and pepper to taste Directions: Preheat oven to 350F. Spray a baking dish with baking spray. Season chicken with salt and pepper and place in the baking dish. In a bowl, combine olive oil, honey, apple cider vinegar, sweet chili sauce, Worcestershire sauce, dry soup mix and salt. Whisk all ingredients together. Pour sauce over chicken. Bake uncovered for 40 minutes. Spoon sauce onto chicken and bake for 5 more

Baked Enchilada Cups

Initially these were a little hard to make only because I saw the recipe on a Facebook page called "Best Bites" but they didn't have a link to the full recipe or any measurements so I just kind of made things up based on the video :) Here is my version. By the way, these are A.MAZ.ING. They make one dozen and I may have eaten all but two :) Ingredients: 4 flour tortillas, medium-large Two chicken breasts, cooked and shredded One can of Cream of Chicken Soup One cup of Red Taco Sauce 3/4 bag of the 8oz bag of Monterey Jack Cheese 1/2 of Enchilada Sauce packet Directions: Take the tortillas and divide each tortilla into fourths. Place each fourth in a cupcake pan. In a bowl, mix the shredded chicken, one can of Cream of Chicken Soup, taco sauce, cheese, and enchilada packet. Add to the tortilla and bake for 400 degrees, 15 minutes. Top with tomatoes, sour cream, more taco sauce, shredded lettuce, olives, or anything you would like! D
