Homemade Pepperoni Pizza

Kevin hasn't been feeling well the past two days so I didn't really feel like cooking much last night. We had pizza dough in the refrigerator so Jace and I decided to make a homemade/handmade pepperoni pizza. We used pizza dough, pepperoni slices, mozzarella cheese, pizza sauce and Italian Seasoning. We took out the dough and spread it out using a rolling pin. Cook in the oven, 400 degrees, for 8 minutes. Top with pizza sauce, mozzarella cheese, pepperoni slices, and Italian Seasoning. Bake for 10-13 minutes or until dough is fully cooked. Enjoy!! There were plenty of leftovers for us to have today for lunch! Super easy! 

Homemade Taco Seasoning

Last night we had tacos in our house and I unfortunately did not have a packet of taco seasoning like I typically do. I decided to Google a homemade taco seasoning and it was really good! I used a recipe by AllRecipes and the only change was using half of the salt and adding water to the taco meat to make sure the taco seasoning absorbs as it should. The full recipe is below!  Ingredients: 1 tbsp chili powder 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp crushed red pepper flakes 1/4 tsp dried oregano 1/2 tsp paprika powder 1 1/2 tsp ground cumin 1/2 tsp salt 1/4 tsp cracked pepper Directions: Combine all ingredients in a mason jar. If you are going to use it for tacos and ground beef, cook the ground beef until no longer pink. Add 1/2 cup water and the taco seasoning. Simmer for 4 minutes. Enjoy! 

Ground Turkey Lasagna

Making lasagna by hand/scratch can be a lot of work. I have made my fair share of lasagna's and even though they take awhile to make, they are so worth it and taste so much better than the frozen lasagna! Especially this one - a Ground Turkey Lasagna. Kevin and I are working on making better/healthier choices, and in this case it was using ground turkey instead of ground beef. This recipe took me about an hour total and usually that ends up being the case with lasagna so it wasn't anything that I didn't expect. The original recipe can be found HERE and we changed a few things including removing the yellow onion, used Italian Style cheese instead of Parmesan cheese and used That's Amore seasonings instead of Parsley.  Ingredients: 1 1/2 tbsp olive oil 1 tbsp minced garlic 1/2 cup milk 1 tube ground turkey 1 tsp salt 1 2/3 cup shredded Italian Style cheese 10oz mozzarella cheese shredded 15oz package ricotta cheese 1 tsp dried oregano 1 tsp That's Amore seasoning 1 t

One pot cajun chicken pasta

If you are looking for a one-pot dinner with a nice little kick to it, this pasta is it. I'll be honest and say that I don't think I've ever had a Cajun meal before and did not even know what to look for when the original recipe showed Cajun Seasoning. I was at Walmart looking at seasonings and it was right there. So much easier than I thought and the meal itself took less than an hour to make. Everything is in one pot too which makes cleaning so much easier. If you make this, please let me know in the comments below. If you want it a little less spicy, just add less Cajun seasoning.  Ingredients: 2 tbsp butter 1 tbsp olive oil 1 tbsp onion powder 2 tbsp garlic powder 1 large boneless, skinless chicken breast cut into 1 inch pieces 1 tsp basil 1 1/4 cups low-sodium chicken broth 1 cup half and half 2 cups water 2 tbsp Cajun Seasoning 3 cups dry rotini pasta 1/2 cup shredded cheese, Italian style Directions: Add butter and olive oil to a pot over medium heat.  Once the butt

Sausage and Vegetable Skillet

I've made several sausage and vegetable skillet dinners before in the past including THIS ONE HERE but they always end up being so different from each other. I love sausage and vegetable skillets for a few reasons. The first is that it's SUPER easy to make. The second is it tastes amazing and the third is it's fairly healthy for you! This one actually has a soy sauce marinade which was pretty salty but not enough to not eat the entire plate ;)  The original recipe was in an email I had received but I did not save it so I don't know who to give credit to :/ Their full version is below and if you recognize this, please let me know so I can give credit!  Ingredients: 1/4 cup soy sauce 1 tbsp sesame oil 1 tsp fresh ginger minced 3 cloves garlic salt and pepper to taste 4 brats 2 assorted bell peppers 1 red onion 1 zucchini 1 yellow square Directions: Cut vegetables into 1 inch pieces. Cake Batter Muddy Buddies

I LOVE cooking and, even though I used to have a cupcake business, I am not really into baking or making treats or desserts as much. Awhile back I saw this recipe for Cake Batter Muddy Buddies and figured Jace would like them and they would be fun and easy to make so I gave it a try. The original recipe can be found HERE and the only thing I changed was the measurements for the yellow cake. I misread the directions and used all the yellow cake mix which was WAY too much. I just literally noticed that it said 3/4 cup + 2 tbsp cake mix so that is definitely something I'll do next time. Don't do what I did! Anyways, I have these all in sandwich bags now and ready to go as a snack or dessert. They are SO good!! What are you waiting for? Only 4 ingredients! Does anyone go to the store and spend so much money with, or without, realizing how much they spent? I spent so much between Walmart and the market yesterday but at least we should have food for the next few weeks! I plan to write three blogs today for you guys to catch up on these past few days and hopefully I'll have more for you guys this week since I have some healthier meals all planned out.  Also, for not currently working, I am surprised at how insanely busy I have been. Crockpot Taco Soup

Staying on the healthier path, last night I made this Crockpot Taco Soup for us with tortilla chips. It was so delicious and tasty, I will definitely be making this again! The original recipe can be found HERE and is not actually a crockpot recipe. The only reason why I turned this into a crockpot is because I do not have a huge enough pot to fit all of the ingredients in. This is a ground beef taco soup recipe. Ingredients: 1.5 lb ground beef 1 tbsp onion powder 1 tbsp garlic powder 1 can pinto beans, rinsed and drained 1 can corn, drained 1 can Rotel tomatoes, undrained 1 packet of taco seasoning mix 2 tbsp of ranch dressing (actual dressing) 3 cups beef broth *Tortilla chips, olives, cheese to garnish Directions: In a crockpot, place all of the ingredients above (except the asterisk, those are for after) and cook on high for 4 hours, stirring occassionally. Easy Beef and Broccoli

Last night's dinner was Beef and Broccoli - a little bit on the healthier side compared to some of the other meals we have had. I'm starting to make better meal choices for Kevin and I both. Tonight we are making Taco Soup and then tomorrow we will make a spaghetti with ground turkey. Sometimes it's just the littlest and smallest changes that make the biggest impact. I didn't take a lot of photos of this meal because I took video instead to make an Instagram Reel which you can see HERE . Jace helped make it and he loves helping with dinner! We used Olive Oil instead of Vegetable Oil, used half the broccoli the recipe asked for, didn't use any chili garlic sauce, and used onion powder instead of onions. Chicken Stuffed with Asparagus

We are hopping back on the healthier-food train so you may see some healthier recipes moving forward. The original recipe found HERE was super easy to make. We used two large boneless chicken breast instead of four, Italian Seasoning instead of Italian Seasoning Mix and Paprika Powder instead of Smoked Paprika. We also eliminated the tomatoes altogether and used shredded mozzarella cheese instead of slices. Enjoy!  Ingredients: 2 large boneless, skinless chicken breasts 1 tsp Italian Seasoning 1 tsp Garlic Powder 1 tsp Paprika Powder Salt and Pepper to taste 6 asparagus stalks 1 cup shredded mozzarella cheese 2 tbsp olive oil Directions: Place the chicken on a cutting board and sprinkle with Italian Seasoning, garlic powder, paprika powder, salt and pepper. Cut the chicken lengthwise to create a pocket but don't cut all the way through. Preheat oven to 400 degrees F. Add three sprigs of asparagus and 1/2 cup mozzarella cheese inside the chicken breast.
