Cheesy Meatball Bake with Pasta

For those who don't know, we are staying with Kevin's Mom until June 10th and then we are moving into the house with the lake views that we wanted in Bradley! We are so excited to move! In the meantime, we have been switching off with making dinner between Kevin's Mom and I and even Kevin! In fact, he is the one who made this meatball recipe. He is such an amazing cook and loves meatballs so I had him make this Cheesy Meatball Bake recipe from Tasty ! As always, we tend to either not-include certain ingredients or we don't have ingredients handy. Instead of using 1 lb ground beef and 1 lb hot italian sausage we only used the ground beef. We also didn't have breadcrumbs so replaced those with Saltines. And instead of garlic we used Ingredients - this made about 16 meatballs: 1 lb ground beef 1/2 cup parmesan cheese 1 tsp salt 1 tbsp Goyo Adobo seasoning 1 tbsp Mrs. Dash seasoning 1/2 tsp pepper 1 cup Saltine Crackers, crumbled 2 eggs 1 cup milk 1 tbsp o

With one day left before May ends, I thought I would write a blog for Mental Health Awareness Month and share my story from 2012. For those of you who don't know, I suffered from mental health- anxiety and depression- back in 2012. Although it hasn't been a huge part of my 30's, it was a huge part of my mid-20's. Eight years ago I went through a lot of major changes in my life - all positive - but with everything happening so quickly, something triggered in my mind where I told myself I did not deserve these things. So much has happened since my last post. We moved in to Kevin's Mom's house on Saturday and we got approved for the place we wanted in Bradley! We are moving in June 10th and it has amazing views of the lake. I can't even wait! In the meantime, I may be cooking off and on but I forgot to write up this recipe before I moved. It may not look that great but I really liked it. It's a low carb, chili cheese dog casserole. Kevin said next time to just use a can of chili LOL but then that removes the whole "low carb" part which I'm trying so hard to be on. Anyways, here is the original recipe . The ingredients that we changed or adjusted - we used garlic powder instead of garlic, we did not add the bell pepper, we used onion powder instead of onion, and we did not use celery salt. Pumpkin Cheesecake Bars

Compared to dinner last night, this recipe was extremely complicated. I'm sure part of it was because we are moving so we have dishes (both clean and dirty) everywhere which leaves no room to bake and no large bowls to actually mix in. Yes, I ended up using a pan to mix in ðŸ¤¦ðŸ¤¦ But we are moving in 4 days so that's my excuse. Anyways, like almost all of my recipes, I was missing maybe three ingredients so I did make several substitutions. These bars tasted just like pumpkin pie without the crust. They are from Wholesome Yum which is one of my favorite recipe books/Keto authors. These bars are healthy but because I made some substitutions, probably not as healthy as the original recipe :) Enjoy! Well we have some positive news about our living situation. We are for sure planning on staying at Kevin's Mom's house for two weeks or maybe less. We did get approved for an apartment in Atascadero which I absolutely loved and it would save us a few hundred dollars every month. We are really stuck on this one in Bradley though and she is still in the process of approving us. If she approves us, we will take that one, if not, we will probably take the Atascadero one unless something pops up in between then. I'm still stressed out though because we are moving in 4 days and have a lot to do still! Since we are moving and don't want to do as many dishes, I will probably make dinner for one or two more nights here before we leave so I'm not sure how often I will be sharing blog posts. Stove Top Seasoned Shrimp

In all of the blogs that I have made this past year and a half, I'm pretty sure I have failed to mention that my boyfriend is an AMAZING cook. He used to cook so much until I took over ;) Last night we made the Korean Sizzling Spicy Pork Ribs and he added Shrimp to the side. I don't like shrimp or seafood so I couldn't create my own recipe if I even tried. So I asked him if I could do a blog post on his shrimp recipe that he made last night and he said sure! So we had frozen shrimp so he removed the tails and then mixed together the following ingredients. I don't know measurements and I'm pretty sure he didn't measure anything. Just mix to your taste using these ingredients: Black Pepper Salt Crushed Red Pepper Onion Powder Minced Garlic Cook on the stove for about 10-15 minutes. Add some butter and cook until done. Enjoy!

Korean Sizzling Spicy Pork with Jasmine Rice

Today is a new day and a new week - and our last week in our apartments. It's still a little crazy to think about - that we are moving in five days. As of now, we are planning on going to Kevin's moms house until we can find a place to move to. Anyways, last night Kevin and I both made this Korean Sizzling Pork with Jasmine Rice. Kevin also made Shrimp and that will be for another blog :) The original recipe is from Food and Wine and is actually for Korean Sizzling Beef but we had Boneless Pork Ribs so we just diced those and used the same marinade. It was pretty spicy but I mixed mine with the rice and it helped. Ingredients: 1/4 cup soy sauce 2 Tbsp sugar 2 Tbsp white wine 1 Tbsp minced garlic 1 Tbsp sesame oil 2 tsp crushed red pepper 2 large boneless pork ribs, diced 2 Tbsp butter Directions: In a shallow dish, combine the soy sauce with sugar, white wine, minced garlic, sesame oil and crushed red pepper. Cast-Iron Skillet Steak Bites with Potatoes

So unfortunately no move update but definitely some positive changes and we are headed in a positive direction. We went and saw this mobile home on 62 acres of property by Lake Nacimiento yesterday. The couple that owns it has a home by it and wow, the views from their backyard are priceless. We applied last night and Kevin and I went on a short walk and talked and figured, ya know, if this is the place for us, maybe this is what we need - just a home that feels like you are in the countryside (the owners have sheep and chickens!) and the mobile home has a wrap-around porch with their own amazing views. It's a little bit more money but to just sit outside, drink a glass of wine and just look out at the lake, that removes so much stress in itself. So fingers crossed! We really liked it and got along well with the owners. We wouldn't move in until June 8th though if that's the case. I'll keep you updated! Here are some photos driving by the lake on our way home :)
