Healthy Turkey Lettuce Wraps

Kevin found another amazing and delicious healthy recipe from Skinny Taste. This is for Healthy Turkey Lettuce Wraps. They were messy but tasted amazing. I wasn't sure about the idea of turkey but overall, it tasted just like a taco salad. You can find the original recipe HERE and ours is below :)                                                     Ingredients: 1.3lbs lean ground turkey 1 tsp garlic powder 1 tsp cumin 1 tsp salt 1 tsp chili powder 1 tsp paprika 1/2 tsp oregano 1/2 tsp onion powder 3/4 cup water 1/2 tsp pepper 8oz can tomato sauce 8 large lettuce leaves from Iceberg lettuce cheddar cheese Additional toppings such as: Olives, taco sauce, sour cream, tomatoes Directions: Brown turkey in a large skillet. When no longer pink, add dry seasoning and mix well. Add water, pepper, and tomato sauce. Cover and simmer on low for 20 minutes. Wash and dry lettuce. Divide the meat and place in the center of each leaf. Top with your favorite

Baked Buffalo Chicken Egg Rolls

I'm still on my health kick but been maintaining weight or going up and then back down so no new updates there. Last week (or maybe earlier this week? These past two weeks have been so jumbled I don't even know!) we had these amazing Buffalo Chicken Egg Rolls. The recipe was originally from Skinny Taste and can be found HERE . We adapted this recipe into our own below. These were AMAZING with Ranch dressing and so delicious baked. Ingredients: 4 boneless skinless chicken breasts Enough chicken broth to cover the chicken breasts 2oz 1/3 less fat cream cheese, softened 1/2 cup mild taco sauce Egg roll wrappers olive oil spray Ranch, for dipping Directions: Place the chicken in the slow cooker and add enough chicken broth to cover. Cook high 4 hours. Remove and shred with two forks. Discard the liquid. Meanwhile, combine the cream cheese and mild sauce together until smooth. I used my hand mixer. Add the chicken and mix well. I knew it would be a busy week and no time for blogging. But, I'm here now. I am officially down 5.1 pounds in 27 days. I'll admit though, I didn't eat too healthy this weekend. Working to get back on track tomorrow :) Last week we made this recipe - Greek Chicken Gyros with Tzatziki. It was an interesting one because I've never made my own Gyros before. Low-Carb Keto Pizza with Homemade Dough

My sisters are coming into town in a few days and bringing my nieces and nephew :) Because of this, I probably won't have a lot of time to make a blog next week so you get two in one day :) We made this Keto Pizza a few days ago. I have seen different recipes for FatHead pizza dough and low-carb pizza crust but I decided to use a low-carb pizza calzone recipe and made it my own. The original recipe can be found HERE . We made our own and just made regular low-carb Keto Pizza.  Ingredients: 1 cup Almond Flour 3/4 brick of Cream Cheese 1 1/2 cups Mozzarella Cheese 1 Egg 1/2 Tsp Baking Powder 1/4 cup Ricotta Cheese 1/2 Ranch Packet Pizza Toppings 1 Tsp Garlic Powder Directions: Preheat oven to 375. Melt Mozzarella Cheese and Cream Cheese together in the microwave in 30 second intervals, mixing in between. For me, I did this 3-4 times. Crockpot Slow Cooker Chicken and Gravy

I went grocery shopping yesterday to plan for the next week of recipes since Kevin may be leaving to Oklahoma in a week. I, unfortunately, will not be going with him as we initially planned. One of the recipes we found was HERE and it was for a Crockpot (or Slow Cooker) Chicken and Gravy recipe. When it comes to chicken, I am super picky and it's probably because I have had a lot of dry chicken in my life. This chicken was PERFECT! Only five ingredients in this recipe and super easy to make and let cook. Ingredients: 2 Large Boneless, skinless chicken breasts 1 Chicken Gravy Packet 1 Can of Cream of Chicken Soup Pepper, to taste 1 Cup Water Directions: In a small bowl, combine the gravy packet, cream of chicken soup, water and pepper. Whisk. Add the chicken breasts to the slow cooker. Pour over the gravy. Place lid on the slow cooker and cook on high for 4.5 hours without opening the lid until done. Shred the chicken. We served our chicken with cornbread and corn. Enjoy

Air Fryer Chicken Breast + Asparagus + Potatoes

Guyssss! Tonight I made this Air Fryer Chicken Breast - it had a little bit of spice and the PERFECT flavor! (Thanks babe for finding this recipe!)! The original recipe can be found HERE . It was easy but there was quite the adjustment of finding the right time in the Air Fryer to make it perfect. Below is our version! Just for reference, I use the Emeril Air Fryer (Thanks Nana!) Ingredients: 1 lb boneless, skinless chicken breast 1 tablespoon olive oil 1/2 cup bread crumbs 1 teaspoon salt 1/2 teaspoon black pepper 1 teaspoon paprika 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/8 teaspoon cayenne pepper Directions: Slice chicken breasts in half, horizontally. Brush each side with olive oil. Stir together the breading ingredients. Dip the chicken breasts in the breading mixture until they are fully coated. Shake off excess breading and place in air fryer basket, 2 chicken breast halves at a time. We cooked ours 4 minutes on one side, flipped, four more minutes
