Baked Spaghetti with Ground Sausage and Ground Beef

Baked Spaghetti is so good that this is the second blog I have written about it. My first one can be found HERE . I used some different ingredients in the first one and we actually had garlic bread the second time around so we didn't have to make our own. I like this one better because it contains sausage and ground beef. The original recipe can be found HERE . Ingredients: -1 pound spaghetti pasta -1.25 pound italian sausage -.75 pound ground beef - 1 tbsp onion powder - 1 tbsp minced garlic - 40oz of pasta sauce - 1 tbsp italian seasoning - 12oz cheddar cheese, shredded - 6oz mozzarella cheese, shredded - salt and pepper, to taste Directions: Brown the beef and italian sausage over medium heat. Drain. Toss in onion powder and minced garlic. Add in the pasta sauce and stir. Sprinkle in italian seasoning, salt, and pepper and turn the heat down to low. Let cook for 10 minutes. Last night I made Garlic Steak Bites with Spaghetti Aglio E Olio Pasta and it was OH so good! I combined two recipes, one for the Steak Bites HERE and one for the Pasta HERE . I didn't take a lot of pictures because I didn't plan on making a blog but it was so good fresh that I couldn't resist. It also took a lot and awhile to make but so worth it! Garlic Steak Bites Ingredients - 1 1/4lbs sirloin steak, cut into cubes - 1 tbsp olive oil - 3 tbsp butter - 1 tsp minced garlic Garlic Steak Bites Marinade Ingredients - 1/4 cup soy sauce - 1 tbsp olive oil - fresh cracked black pepper Garlic Steak Bites Directions In a mixing bowl, combine the ingredients for the steak marinade. Add the steak, mix well and marinate in the fridge for 15 minutes minimum. Heat the olive oil in a large skillet over medium heat. Drain steak bites from the marinade and add to the pan. Creamy Ranch Chicken Casserole

Last night I made this Creamy Ranch Chicken Casserole - Jace and I liked it but Kevin didn't. It's definitely better when you eat it right away rather than reheating it. I also had to cook it a lot longer than the original recipe stated. This was a really easy recipe to make, it just took about an hour overall for it to be done baking. Ingredients: - 3-4 pieces of boneless, skinless chicken breast, cut into tenders/slices - 10 1/2oz can of cream of chicken soup - 1 1/2 cups sour cream - 1oz ranch seasoning packet - 1/2 cup cheddar cheese, shredded - 10 Ritz crackers, crushed Directions: Preheat oven to 350 degrees. Spray a baking dish with cooking spray and place chicken in the bottom of the pan. In a separate bowl, stir cream of chicken soup, sour cream, ranch seasoning and cheese and spread over chicken evenly. Top with crushed crackers and bake 30 minutes. After 30 minutes was up, I checked and placed back in the oven for 8 more minutes, then 8 more, t

Last night, Kevin's mom was nice enough to give us some pork chops for dinner. They weren't made and, quite honestly, I couldn't tell you the last time I even had pork chops so I had no idea where to even start. I looked up a recipe online HERE and we made it our own below. The original recipe called for freshly grated Parmesan and I replaced it with Italian Breadcrumbs. I also replaced Garlic Powder for Minced Garlic. These tasted WAY better than the ones I have had in the past. The seasoning was really, really good! Ingredients: 8 thinly sliced pork chops 2 tbsp extra virgin olive oil 1/2 cup italian breadcrumbs 1 tsp salt 1 tsp paprika 1 tsp minced garlic 1 tsp onion powder 1/2 tsp pepper Directions: Pat pork chops dry with paper towels and coat both sides with olive oil. Crockpot Taco Casserole Soft Tacos Flavorful Taco Meat

I'm pretty sure with the almost-zero free-time I get now-a-days, I spend it catching up on blogs. Tomorrow I'm working 10 hours and then Saturday I'm working 8 hours so it will be a crazy weekend. I figured I would catch up on a blog to satisfy at least until next week :) Again, last Sunday I was able to plan my meals for the week which was nice because the last few weeks I have been so inconsistent with my diet. Even now I'm sitting here eating Skittles - what can ya do? Last night we tried this Crockpot Taco Casserole but because I didn't add onions or anything in the crockpot, it was more like really delicious and flavorful taco meat. We put the meat in tortillas and it was the most flavorful soft taco I've ever made! Has anyone else experienced a weird week this week? I thought with it being a holiday weekend, things would be okay still but I barely know what day it is. Yesterday I worked 10 hours, today I worked 5 and then went to the gym. It's been quite the past few days. Luckily on Sunday I was able to prepare our meals for the week so even with my chaotic schedule, I'm still able to cook :) A few nights ago I made this Shredded Chicken Casserole Bake. It was SUPER easy and SUPER good. Jace loved it and had seconds. Next time I will use what the initial recipe called for - 8oz of cream cheese instead of 4 (all I had). Shredded Buffalo Ranch Chicken Sandwiches

Have you guys ever had those weeks where you just eat unhealthy all day, every day? I'm not sure if it's the holidays or I just don't want to spend more for healthier food, but my last few recipes have not been low carb or Keto in any way haha. The good news is I'm still down about 7-8 pounds since June. I haven't gained weight so that's a good sign. A few nights ago I made these Buffalo Ranch Chicken Sandwiches. They are SUPER easy and only use four ingredients - Chicken Breasts, Buffalo Wing Sauce, Cream Cheese, and a Ranch Packet! And you use your crockpot so no baking or frying involved! I used a whole bottle of Buffalo Wing Sauce and I have to say - it was superrrr hot. So if you don't like heat, maybe use half of a bottle instead. Full recipe below. "Out of this World" Beef and Shells in the Cast-Iron Skillet

Last night, Jace (who is 8) and I had a long conversion about food and restaurants. His Dad and I have talked about opening a restaurant and I love to cook so this was the perfect topic. I was surprised at how into it an 8 year old was though. He said that he wanted him and I to be the chefs and "Daddy can be the boss"! We also came up with a restaurant name, "KJ and A" for "Kevin, Jace, and Abbie" I thought it was fun. I have to say, since I cook almost every night, I am very happy with how Jace eats. He eats food that no other 8 year old would eat. He loves baked potatoes, he ate almost a whole can of green beans, and he loves hot cheetos. He tries everything I cook and most of the time he ends up loving it. I just hope when he gets older, this will help with him being open to trying new things and new experiences. Last night I made this Sesame Chicken in the Air Fryer. To be honest, I think I overcooked it but Jace liked it and he is the type that will straight up say something if he doesn't like it. The time and cooking temperate I followed to a "T" in this recipe HERE  (and below). I did have four chicken breasts in the air fryer compared to the two that she used so that could be a big reason as well. Ingredients: - 4 boneless, skinless chicken breasts - 4 tbsp sesame oil - 1 tsp salt - 1/2 tsp pepper - 1/4 tsp cayenne pepper - 1 tbsp roasted garlic powder - 1 tbsp onion powder Directions: Rub the chicken breasts with sesame oil followed by all seasonings. Rub gently to ensure even coverage. Place chicken breasts in the air fryer and heat at 380F for 20 minutes. When the time is up, flip the chicken breasts and cook for 10 more minutes. I have the Emeril Air Fryer so times can vary. Serve with your choice of vegetables or toast if you would like. L

I made this Baked Cheesy Mexican Layer Dip about two weeks ago and we actually ate it as a meal. Not only is it delicious, it is also healthy - with the original recipe being from SkinnyTaste . I never thought I would make a dip as a meal but it had enough flavor and ingredients, that it ended up being just fine! With NFL and NBA season back in play, it can also be a perfect snack or appetizer. I went back to Grocery Outlet after I purchased the Ground Turkey for $1.50 and it was STILL $1.50! I couldn't believe it. Normally it's $5.00 so I was super excited. I purchased more for this recipe and to freeze for later.
