Slow Cooker Chicken Chili

Now that the Utah Jazz season has started, game nights need to have simple dinners. Kevin found this recipe for Slow Cooker Shredded Chicken Chili and it was perfect! This recipe was from Simply Recipes and we made this one our own. We don't use onion or garlic and instead we use onion and garlic powder, I also replaced tomato puree with tomato paste and we did not add any celery. We used Saltines to dip and it was so perfect! I will be making this again! Ingredients: 3 boneless, skinless chicken thighs 1 Tbsp onion powder 12oz tomato paste 1 cup chicken broth 1 Tbsp garlic powder 2 Tbsp chili powder 1 tsp cumin 1 tsp oregano 1 tsp salt 1 can black beans, drained and rinsed 1 cup corn, drained 1 Tbsp apple cider vinegar Directions: Combine the chicken, seasonings, chicken broth and tomato paste in the slow cooker. Cover and cook for three hours. Shred the chicken, add the can of black beans, corn and apple cider vinegar and cook for 45 more minutes. Enjoy

Slow Cooker Chicken Enchilada Casserole

This Slow Cooker Enchilada Casserole was just the recipe we needed this weekend. This weekend was calm, relaxing and stress-free. We watched a lot of Netflix and just hung out. Kevin and I made Chili Cheese Dogs Friday night so I decided to make this enchilada last night. It was super easy and we only used 4 ingredients! The original recipe was from The Magical Slow Cooker which is one of my favorites for slow cooker recipes! The only difference from her recipe compared to ours was we didn't add olives and we adjusted a few measurements. Keep in mind that our recipe is only based on two people and there were so many leftovers! Ingredients: - 3 boneless, skinless chicken thighs - 12oz can of Enchilada Sauce - 8 corn tortillas - 2 cups grated cheddar cheese/mozzarella cheese Directions: Put the chicken thighs and enchilada sauce in a slow cooker and cook on high for 4 hours. The past two years I have been putting together a blog post of deals, ideas, and gifts for Christmas. Especially with COVID-19 happening this year, our budget is super tight so I try and look for deals and I usually purchase Christmas gifts months ahead. Slow Cooker Shipwreck Stew

Have you guys heard of Shipwreck Stew? I hadn't until I tried it last night - it was more like a delicious chili - I even had two bowls! This is definitely one that I will be making again. The original recipe was from The Magical Slow Cooker - HUGE fan! We made some changes such as onion powder instead of onion, no celery or mushrooms. I also didn't add any water. Super easy to make  - just put in the crockpot on low all day! Ingredients: 1 lb ground beef 3 potatoes, sliced 2 tsp onion powder 15oz can kidney beans, drained and rinsed 2 10.5oz cans of tomato soup 1.25 packet of taco seasoning Directions: Brown the ground beef in a skillet on the stovetop until cooked through. Drain and add to slow cooker. Add the remaining ingredients and stir. Cover and cook on low for 5-7 hours. Serve with cheese on top!

The Most Amazing Mongolian Beef

Have you ever made a recipe where there was literally not one single speck leftover? That was this meal for Kevin and I. We both LOVED and DEVOURED this Mongolian Beef, Broccoli and Rice recipe! The original recipe came from HERE and I made things a little bit different. We don't use garlic in our recipes, always minced or garlic powder. We also used ground ginger instead of minced and no green onions. Ingredients: 2 Tbsp + 2 tsp Olive Oil 1/2 tsp ground ginger 1/2 Tbsp minced garlic 1/2 cup soy sauce 1/4 cup water 1/2 cup brown sugar 4 thin slices of flank steak (or your favorite kind of thin steak) 1/3 cup cornstarch Directions: Heat olive oil in a small pan over medium. Add ginger and garlic and stir about 1 min. Add soy sauce, water, and brown sugar and bring to a boil. Let boil for 5 minutes or until slightly thick and set aside. Slice the steak into thin strips and toss in the cornstarch, making sure it's completely covered. Place some olive oil

Baked Chicken Parmesan

Last night, alongside the Garlic Butter Rolls , I made this baked Parmesan Chicken. I've made a lot of Parmesan Chicken recipes in my life (see below) but this one was probably one of the best ones I have made. It seems like with baked chicken I either cook it too long or not as much as I should but I was able to find the perfect time for this one (different than the original recipe). The original recipe was from Yummly HERE . Ingredients: - 2 large boneless skinless chicken breasts, cut in half, horizontally - 1 1/4 tsp salt (1 tsp for chicken and 1/4 tsp for breading) - 1/2 tsp pepper - 1/3 cup flour - 1 egg - 1/2 cup panko breadcrumbs - 1/2 cup shaved Parmesan Cheese - PAM or cooking spray - 12oz marinara sauce Directions: Preheat oven to 375 degrees. Spray a cookie sheet with PAM or cooking spray and set aside. Cut chicken in half and season both sides with salt and pepper. Keto Garlic Butter Rolls

Let me start off by saying that if you want to make Keto Garlic Butter Rolls, you want to use 1.5 cups of Almond Flour, not regular flour like my recipe calls for. I went to the market looking for Almond Flour and it was $10! I couldn't get myself to purchase it or I would have made them all the way Keto and swapped out the regular flour. The original recipe was from Eat Well 101  and I made quite a few changes from the original recipe. Besides the flour, I used less eggs, shaved parmesan instead of grated, and added different ingredients in the garlic butter sauce. If you make these, let me know if you love them as much as I did! Ingredients: - 2.5 cups of shredded mozzarella cheese - 2oz cream cheese - 2 eggs (if you use Almond Flour, you will want to add one more egg) - 1 cup flour (if you want them to be fully Keto, use 1.5 cups of Almond Flour instead) - 1 tsp baking powder - 1/3 cup bacon bits - 1/2 cup shaved Parmesan cheese - 1 tsp Italian seasoning - 1/4 cup b

Sheet Pan Ground Beef Nachos

This blog and the Sharp White Cheddar Cheese Dip/Sauce blog go hand-in-hand. Last night I made ground beef sheet pan nachos and poured the cheese dip on top. If you haven't tried this before, it's a MUST. The original recipe was from California Grown HERE and they were super easy to make. The original recipe called for chicken and we used ground beef. We also didn't add radish, olives, cilantro or jalapenos like the original recipe. We also topped ours off with the cheese sauce! Since it was only Kevin and I eating this, I only used half of the bag of chips.
