crispy fried chicken tenders

Happy Sunday!

I am spending my morning working out, about to watch the Broncos game, and having to work today. Next weekend is my birthday and Kevin and I are going to Colorado. It's our first flight together in the five years we have been dating! I can't believe it. I wanted to catch up on blogging so I don't try and cram it in this upcoming week. 

Last week we had these crispy fried chicken tenders. The full recipe is from Yellow Bliss Road and can be found HERE. The only thing we changed was the measurement of cajun seasoning from two tbsp to one because we ran out. Besides that, we followed this recipe to a T and would highly recommend! 

Ingredients:
2 boneless, skinless chicken breasts, cut into strips or chunks
1 1/2 cups flour
1 tbsp cajun seasoning
1/2 tsp onion powder
1/2 tsp garlic powder
2 eggs
1 tbsp water
Vegetable oil


Directions:
In a large bowl, mix together the flour, cajun seasoning, onion and garlic powder and set aside. In another bowl, beat the eggs and water and set aside. 

Dip one chicken tender at a time into the flour, into the egg mixture and back into the flour. Repeat this process. 

In a skillet, add vegetable oil, heat on medium high. Flick water onto the oil. Once hot and sizzles, it is ready to go. Slowly add chicken into the skillet, allow them to brown and fry on one side about five minutes, and then turn and cook for 6-7 minutes. If they start to burn or smoke, turn the heat down or flip. Transfer to a plate. 




Serve with rice and broccoli and your favorite dipping sauce. Enjoy!
