chicken lo mein

If you are looking for a homemade Chicken Lo Mein recipe, this is it. This recipe is from Dinners, Dishes and Desserts. The original recipe can be found HERE .  Ingredients for chicken: 1 tbsp vegetable oil 1 pound chicken breast, cut into strips 1.5 tbsp garlic powder 2 tbsp ground ginger 2 tbsp soy sauce (low sodium) Ingredients for Veggies: 1/4 cup chopped carrots 2 cups broccoli Ingredients for sauce: 1/4 cup chicken broth 1 tsp cornstarch 1 tbsp sesame oil 1/4 cup soy sauce 1 tsp brown sugar Rice noodles, according to package directions Directions: In a large skillet, heat over high heat. Add chicken, garlic powder, ground ginger, and soy sauce. Cook for 4-5 minutes until chicken is browned. Remove from pan. Add carrots and broccoli and cook 3-4 minutes until vegetables are soft. Meanwhile, mix together the ingredients for the sauce. Pour over the vegetables and bring to a boil for one minute. Add chicken back to the pan and mix until everything is well coated and sauce thickens. 

Pulled Pork with Homemade Sauce

If you love pulled pork like my family does, but want a healthier version, this is the one for you. This recipe is from NW Kidney and can be found HERE . This is a homemade BBQ sauce since regular BBQ sauce can be so full of sugar and unhealthy ingredients. There may be a lot of ingredients but this is a slow cooker recipe so, once the sauce is made, it's just a sit-and-go recipe from there. You can turn this into a pulled pork sandwich or just eat the pulled pork plain, like we did. We served ours with potatoes and broccoli.  Ingredients: 1 cup ketchup (preferrably low sodium although I couldn't find this anywhere) I was able to find a no-sugar ketchup 1 cup no-salt tomato sauce 2/3 cup brown sugar 2/3 cup red wine vinegar 1/4 cup molasses 2 tsp liquid smoke 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp chili powder 1/2 tsp paprika 3 cinnamon sticks 1/4 tsp cayenne pepper 1/2 tsp pepper 4 pounds pork shoulder roast Directions: Mix all ingredients (except the pork shoulder

I hope you all had an amazing Christmas! Yesterday we went to my mother-in-laws and she made turkey, potatoes, macaroni and cheese, apple pie, and a bunch of delicious food. My son enjoyed Christmas so much and said it was one of the best ones he has had. His big gift was a trip to Legoland that we are taking in a few months. Tomorrow Jace and I will be heading to Utah for the week to visit my family and I'm so excited. Merry Christmas! Today and tomorrow I'm hoping to catch up on blogging because next week I will be in Utah for five days with Jace. I'm so excited to see my family. About a week ago I made this beef stew. Now, I know that my photos aren't that great but trust me, it was a delicious stew. It's been raining non-stop here for the past 4-5 days (with just a few breaks in between) so if you are looking for a beef stew that can sit in the crockpot all day, this is it. This is another recipe from Diabetes Food Hub and can be found HERE .  Ingredients: 3 tbsp flour 1 tbsp olive oil 3 cups low sodium beef broth 1 cup water Carrots, chopped 1 tbsp onion powder 1/2 tsp pepper 1/2 tsp dried thyme 2 pounds beef stew meat, or stew meat Directions: In a crockpot, add all of the ingredients. Cover and cook on high for 4 hours. Serve in a bowl with biscuits.

I can't believe that tomorrow is Christmas Eve. It is finally here! It's been raining non-stop the past two days which has been amazing - but that also means flooding. We are planning on going down to my cousins tomorrow so I hope the flooding is cleaned up so we can actually make it there.  Tonight for dinner I made basic spaghetti because tomorrow and Christmas day we are having Christmas dinners of turkey, ham, chicken and other holiday food.   Let's be honest, these photos of my amazing tacos are terrible. But this was literally all I took because I scarfed them down within seconds. They were SO good. The holidays are finally here and I can't even believe it! I have been working my butt off this past month because in less than two weeks I will be spending five days in Utah to see my family after Christmas. I am so excited!  This past month has been insanely busy. Two nights ago we saw Spiderman in theaters and it was so good you guys! I never saw any of the past movies but it was definitely a movie to get into! With next weekend being Christmas (!!) I have been buying gifts, wrapping, and shipping and it's been a little crazy. Although I can say that it's nice to finally be able to afford a Christmas. It's been a rough few years for me living here in California. I was unemployed for 10 months due to COVID and started back to work full-time in October and I absolutely love what I do! Even though I am so busy nowadays, I still have time to cook at least five out of seven days per week. In fact, I cook so much and so behind on my writing that I have about six food blogs

Hello everyone! We just got back from a busy weekend trip down South. We took Jace to Dave and Buster's for his 11th birthday and we got to visit with his Aunt and Uncle which was so nice. This week was so busy so it was nice to have a little weekend break. Friday night we had his Nana over for presents and cake and pizza. I can't believe we have an 11 year old! I'm behind on blogs like always and a few weeks ago we made this Chicken Broccoli Alfredo Bake. This one, I would say, is not the healthiest, but it was really good.
