Pulled Pork Sandwich

One final pre-Christmas or the day-after-Christmas recipe when you no longer want to cook a huge, fancy meal. This recipe is actually for pulled pork with bourbon peach barbecue sauce. We didn't do the sauce and instead turned it into pulled pork sandwiches. This recipe is from My Recipes and can be found HERE . I actually forgot to take a photo of the actual sandwiches (whoops) but they were good! We don't use salt so I removed the salt and then I removed the entire sauce from the original recipe. Ingredients: 2 tsp paprika 1 tsp pepper Pork shoulder roast Cooking spray 1/2 cup organic chicken broth 1/3 cup balsamic vinegar 1/3 cup molasses 2 tbsp lower sodium soy sauce 1 tsp crushed red pepper 1 tbsp garlic powder 1 tbsp onion powder Directions: Heat a large skillet over medium-high heat. Combine paprika and pepper and rub over the pork. Coat a pan with cooking spray and add the pork to pan. Cook 10 minutes, turning after 5 minutes to brown both sides.  Place in a slow cooker

Baked Spaghetti Recipe

With Christmas Day tomorrow (can you believe it??) I thought I would share a few recipes to try when you are done with your "Christmas dinner" (we had ours a few days ago at Kevin's moms house) and ready for something different. This Baked Spaghetti recipe takes some time to make but Jace (he is 12) said this is wayyy better than regular Spaghetti.  This recipe is from AllRecipes and can be found HERE . We replaced the onion with onion powder, we replaced meatless spaghetti sauce with organic spaghetti sauce, and we did not use cottage cheese. Believe it or not, without cottage cheese, it still tasted amazing! One Pot Cajun Chicken Pasta

Another day, another pasta recipe. A few nights ago we made this Cajun Chicken Skillet Pasta meal from Buns in my Oven and it was divine! We used Farfalle pasta (aka bowtie pasta) instead of fettuccine, we did not use bell pepper, we replaced garlic with garlic powder, replaced heavy cream with milk, and parmesan cheese with mozzarella cheese. This was a very comforting meal and perfect on the cooler days. Ingredients: 8 oz bowtie pasta 2 large boneless, skinless chicken breasts 1 tbsp olive oil 1 tbsp butter (we use unsalted) 1 tbsp cajun seasoning 8oz turkey smoked sausage 1 tbsp garlic powder 1 1/4 cups milk 3/4 cup mozzarella cheese 1 tbsp parsley Directions: Bring a large pot of water to a boil and cook the pasta to al dente, drain. Wow, I am very far behind on blogs. I had COVID for almost two weeks and I'm still a little bit sick. I didn't start cooking until this past week really but now I have 4-5 blogs to catch up on stay tuned.   Last week we made this Creamy Tuscan Garlic Chicken recipe from All Recipes and it was really good! The original recipe can be found HERE . For this recipe, I used Rotini pasta instead of Penne and I did not add spinach or sun dried tomatoes. We also added a touch of paprika :) Ingredients: 12oz rotini pasta 1lb chicken breast 3 tsp garlic powder 3 tsp Italian seasoning 3 tbsp olive oil 2 cups heavy cream 1 cup organic chicken broth 1 cup parmesan cheese 1/4 tsp paprika Directions: Bring a large pot of water to a boil.
