Sweet and Sour Chicken

A few nights ago we decided to make some Sweet and Sour Chicken - courtesy of the "shirtless Chef" aka Jace who always takes his shirt off and puts his apron on. It's the most hilarious thing but he's been helping a lot with dinners this week which I have greatly appreciated.   We love fried food and make fried food at home probably once a week. The fried chicken that we have been making lately has been PHENOMENAL. With this Sweet and Sour Chicken recipe from Dinner Then Dessert , we actually didn't use peppers or pineapple. We used monkfruit in place of sugar and onion powder in place of onion. We also replaced garlic with garlic powder. Although it didn't have the usual pineapples and peppers, Jace said it tastes just like Sweet and Sour Chicken that you order and takeout so I will take that!  Ingredients: 1 1/2 Large Chicken breasts, cut into cubes 1/2 cup cornstarch 2 eggs 1/4 cup flour Vegetable oil, for frying 1 tbsp onion powder 1/2 cup monkfruit 1/4 cu

Low Carb Sticky Chicken thighs Recipe

If you are looking for an AMAZING chicken recipe, you will want to try this low carb sticky sauce chicken! This recipe was SO good. The original recipe can be found HERE . I did not add fish sauce and switched out the brown monkfruit for regular monkfruit.   Ingredients: 2 tbsp avocado oil 1.5 lbs chicken thighs, cut into cubes 1/3 cup coconut aminos 2 tsp Monkfruit  1/4 tsp garlic powder 1/4 tsp ground ginger 1/8 tsp pepper 1/8 tsp xanthan gum sesame seeds for garnish Directions: In a large skillet, spray it with Avocado Oil and add cubed chicken thighs - cook about 4-5 minutes on each side. While the chicken is cooking, in a bowl combine the coconut aminos, monkfruit, garlic powder, ginger and pepper.  Transfer chicken to a plate and set aside. Reduce heat to medium low, and pour in the sauce. Bring it to a simmer and then add in the Xanthan gum.  Put chicken back in the sauce pan and cook for a few minutes. Serve with rice and vegetables. 

Air Fryer Chicken Tenders

Earlier this week we made these healthier Air Fryer Chicken Tenders. The original recipe can be found HERE . We didn't have some of the ingredients and with the original recipe being Keto, I can't say that our substitutes still make it that way. It was definitely healthier than regular chicken tenders. And everything is better in the Air Fryer!  Ingredients: 1.5 large chicken breasts, cut into tenders 1/3 cup flour 1/3 cup romano cheese, shredded 3-4 Stoned Wheat Thins, crumbled (these are like a fancier saltine cracker) 1 egg 1/2 tsp garlic powder 1/2 tsp parika Some pepper Directions: Preheat Air Fryer to 400 degrees F. Add all ingredients in a bowl except chicken and egg. Mix. Add the egg in a separate bowl. Dip each tender into the egg and then into the breading mixture. Spray the basket with PAM or cooking spray. Add the chicken to the Air Fryer. Add olive oil on top of the chicken. Air Fry for 6 minutes and flip for another 6 minutes. Enjoy with BBQ sauce or other dipping

My 11 year old LOVES to cook. He puts on his apron, acts like he is Guy Fieri and adds his touch and flavor to every meal. A few nights ago he requested homemade hamburgers and french fries and I decided to let him take the wheel. Besides helping him with dividing the patties and flipping them and cutting the potatoes, he did almost everything else and I was super impressed. The homemade french fries recipe was from Well Plated and can be found HERE .  Ingredients: olive oil 5 potatoes, sliced into wide strips 1 tsp garlic powder 1 tbsp dill weed 1 tsp onion powder pepper Directions: Spray a baking sheet with PAM or cooking spray. Scrub and slice the potatoes into wide sticks. Place them on the baking sheet and pour olive oil on top.  Add the seasonings and mix using your hands. Bake for 20 minutes, flip and bake for 10 more minutes. Serve with burgers, ketchup, or BBQ sauce! 

Davita Blueberry Muffins

My favorite go-to meal that never gets old is definitely breakfast for dinner. That has been a fan fav for most of my life. Two nights ago I decided to add these blueberry muffins to the mix. They are kidney-friendly so they focus on sodium and phosphorus. Here are the substitutes I made - Monkfruit for regular sugar, sweetened condensed milk for rice milk, olive oil for vegetable oil, lemon juice for lemon zest, fresh blueberries for frozen blueberries. Feel free to make the original adjustments (the reviews on the site were good for the original recipe but I didn't have some of the items so I just created substitutes.) The nutrition facts may not be as accurate as if you followed the directions. Davita Chicken Pesto Pizza

If you are looking for a unique, flavorful, healthy homemade pizza, this is for sure it. The original recipe is from Davita (our favorite) and can be found HERE . I bought a pizza dough from Albertsons, didn't use bell peppers, used onion powder instead of red onion, and eliminated the chives. We also added Italian seasoning and That's Amore. This recipe uses a grill but I baked ours in the oven since we didn't have a grill. Ingredients: 1 pizza dough 2 tbsp onion powder Sun-dried tomato pesto 2 tbsp olive oil 1 cup shredded chicken 1/3 cup grated Romano cheese 1/4 cup mozzarella cheese 2 tbsp Italian seasoning  2 tbsp That's Amore seasoning by Pinch Spice Market Directions: Spread the pizza dough out on a flour surface. I used a cutting board and rolled it out with a rolling pin. Add the sun-dried tomato pesto as your base. Leave about 1 inch on all sides. Top with shredded chicken (I baked it in the oven for about an hour so it would shred. Our crockpot went out last
