Easy Chicken Fried Rice

As promised, here is another healthier recipe that was fairly easy to make. This recipe is from Fresenius Kidney Care and can be found HERE . The original recipe did not have chicken so we added that. We did not use scallions and used ground ginger and garlic powder instead of fresh ginger and minced garlic. I thought this was so good and would highly recommend! 5-Stars from my family!  Ingredients: 3 tbsp vegetable oil 2 large eggs, beaten 2 tsp ground ginger 2 tsp garlic powder 2 cups (or one bag) frozen vegetables (thawed) 2 cups cooked brown rice 2 1/2 tbsp reduced sodium soy sauce 1 large chicken breast, cut into chunks Directions: Start with making the chicken first. Use 1 tbsp of vegetable oil and let it sit in a wok or skillet for a few minutes to get hot. Stir fry the chicken by adding the chicken chunks in the pan and stirring every 30 seconds for 5-8 minutes, or until brown. Move to a plate.  In a bowl, add the eggs and whisk together. On hig

The last two nights have been healthier meals and I'm so proud of myself and my family for that. I went to Vons on Saturday for the first time in, I don't know how long, and that will officially be my go-to store. They had EVERYTHING. They had organic, low sodium, no salt, regular, and then 25,000 other types of everything. Anyways, Kevin and I put together a list of about two weeks worth of meals - most healthy - so I will be sharing some of those.  This Easy Herb Chicken recipe was really simple to make (as long as you have a food processor) and is from NW Kidney and can be found HERE .  Ingredients: 1 tsp That's Amore - Pinch Spice Market 1/4 tsp tarragon 1/4 tsp paprika 1/4 tsp black pepper 1 1/2 slices of whole wheat bread 2 large boneless, skinless chicken breasts Directions: Preheat oven to 400 degrees. Combine herbs, spices and bread in a food processor. Mix well. Dip chicken into the herb mixture.  Bake in a single layer for 20-25 minutes. Serve with potatoes and r

I am SO excited - I ordered a treadmill 3 weeks ago and I'm finally getting it on Monday! I've had my bike the past year and a half or so but I haven't been losing weight with it. I'm ready to lose some weight. And I have to say, the dinner we had last night - Homemade Panda Express Orange Chicken - made me realize that I don't always eat the best either. I try and balance it but last night's recipe was definitely not healthy.  Although this recipe was AMAZING, it took long to make and was messy. It's no wonder people just go to Panda Express instead of making it at home. Did you know that my "food blogging" started because of a Potato Soup recipe back in 2018? This is a recipe from NW Kidney so it's a healthier version - although it's a longer version. It was so good and it will definitely be in the monthly recipe lineup.  Ingredients: 5 medium sized potatoes  1/3 cup flour 4 cups milk 1/2 tsp pepper 4oz reduced fat monterey jack cheese or parmesan 5 bacon strips, cooked and crumbled (not part of the original recipe) Directions: Poke holes in the bake potatoes with a fork. Life is all about balance, right? Last night we had Beef Enchiladas - homemade - with a recipe from NW Kidney that can be found HERE . Being a "healthier" recipe, I didn't know what to expect but I was more than surprised on how good these turned out. PLUS, I dropped 1.5 pounds overnight. Although I can't guarantee weight loss, I typically lose weight when I switch over to DaVita or kidney-friendly recipes.  In this recipe I used onion powder in place of an onion and garlic powder in place of garlic. I didn't want to use small corn tortillas because they fall apart so I found some Handmade Style Tortillas that were made from a blend of white and wheat corn. Will definitely buy again! Ingredients: 1 pound ground beef 2 tbsp onion powder 1 tsp cumin Black pepper for taste 1 tbsp garlic powder 6 Handmade Style Tortillas 1 can enchilada sauce 2 tbsp olive oil Four Cheese blend, to top Directions: Brown the meat in a frying pan. Three Cheese Penne Pasta - Inspired by Applebees

I literally just made this recipe and had to write a blog to share how amazingly good it was. Jace and I both ate our entire plate. The original recipe is from Insanely Good Recipes and can be found HERE . It was really easy to make and super good! I used one large chicken breast to feed the three of us. I did not use tomatoes, I used garlic powder instead of garlic, and a little more pasta and alfredo sauce than the original recipe called for. Ingredients: 1 large chicken breast 1/3 cup Italian salad dressing 1.5 tbsp garlic powder 1 tsp basil 5 tbsp olive oil One bag of penne pasta 25oz alfredo sauce (I used almost 2 jars) 4oz shredded Italian cheese (mozzarella, parmesan, and provolone) Directions: Cut the chicken into bite-size pieces. Add to a bowl along with the Italian salad dressing. Marinade in the fridge for 30 minutes.  While that is marinating, in a separate bowl, add the garlic powder, olive oil and basil and stir. Happy football Sunday! Too bad my Broncos and Kevin's Colts are not going to playoffs this year :(  With it being a new year - what are your new year's goals or resolutions? I have a lot of goals for myself this year but we are definitely going back to healthier recipes (after this one haha) and back to working out 1-3x per week. I ordered a treadmill that should be here by Friday (fingers crossed) and I'm more excited about that than the bike I've been using the past year.  Anyways, last night we made this amazing sticky garlic chicken recipe from Sel Magique that can be found HERE . After this one, most of our recipes will be healthier (low sodium or made for kidney disease) so stay tuned. Ritz Cracker Chicken

Have you heard of Ritz Cracker Chicken? It sounds odd, right? Crushed up Ritz Crackers are actually used as the breading for this chicken recipe by Insanely Good Recipes HERE . This recipe has 6 ingredients and probably the easiest recipe you will make all year.  Ingredients: 2 eggs, beaten 1 cup crushed Ritz crackers (put Ritz crackers in a measuring cup or a bag and then use a rolling pin or your hands to crush them) 1/2 tsp Salt Free Garlic and Herb seasoning by McCormick (this replaces garlic salt in the original recipe - we don't use salt often) Ground pepper 4 boneless, skinless chicken breast halves 1/2 cup butter, cut into chunks Place the eggs and the Ritz crackers in two separate bowls. Preheat oven to 375 degrees. Add the garlic and herb seasoning and pepper to the Ritz crackers and stir. Spray a pan with non-stick spray. Dip the chicken in eggs until covered and then dip into the crumbs. Arrange the chicken on the pan and place butter around the chicken.   Cover with al

Sleep.  Does this process sound all too familiar?  As humans, we are wired to work. Overworking is praised. Working into burnout means you are doing something right. Right? And when we lose our job, we sometimes feel hopeless because work is what we do. Losing two jobs during COVID was heartbreaking for me and I was out of work for 10 months. I’m sure most of you can relate to losing a job, working less, and fighting for unemployment. So, when I got a full-time job in October of last year, I did what I was supposed to do. I became super focused, constantly worked, worked overtime, and did everything I could to keep my job. Getting a raise after six months (that I didn't have to ask for) pushed me even more into work mode. Until I got burned out - which is ironic because the company I work for really stresses work/life balance. I had to learn the hard way.
