Turkey Chili with Beans in the Crockpot

Last night we wanted to make an easy and simple recipe so we decided to make this Turkey Chili with Beans recipe. Part of the recipe was made up and the other part was from Cooking NYTimes .  Ingredients: One pound ground turkey, cooked 1 cup chicken broth 1 can Diced Fire Roasted Tomatoes 1 pack chili seasoning 1 can red kidney beans 1 can black beans 1 tsp chili powder 1 tsp cumin 1 tsp oregano 1 tsp pepper Directions: Add everything in a crockpot and set on low for 4.5 hours. Chicken Marinade for Chicken Thighs and Drumsticks

I think I'm just gonna stick with the fact that my weeks are always going to be long and busy. No matter how much I try to have a break, it doesn't ever happen haha (during the week, not weekends luckily). It's OK though. Last Saturday Kevin and I were able to go out on an amazing date and it has been well worth the busyness. We went to the movies, out to lunch and dinner, we went to the doughnut shop, and watched the boxing match at the movie theater. He paid for ALL of it. Is it just me or does the holiday 3-day weekends end up feeling soooo much longer than normal weeks? I didn't work on Monday and I feel like this is the longest week of my life. It's not necessarily a bad thing, it just feels super long. I have been in a weight loss plateau so this week I had some extra time and went to the gym 3 days this week. I also decided to only purchase and focus on low-carb or keto foods - I usually only stick with low carb for dinner meals and not really throughout the rest of the day. I purchased almonds, quest bars, egg bites, and other snacks to help me get through the day. I am down 9 pounds as of today but still keep going up or plateauing so I'm trying to change my habits. Chicken Bacon Ranch Casserole Bake

Holy moly. This casserole bake was so good. There was a light ranch taste so it wasn't overpowering. It was creamy and the bacon crumbles were so good. This casserole dish took for-ever to make but SO worth it. Jace ate a whole plateful, I did as well and Kevin took some to work today. The original recipe was from Southern Living HERE . We changed our recipe a little bit - using Shells instead of Penne, making our own Ranch Dressing seasoning, using Basil instead of Parsley and Garlic Powder instead of Minced Garlic. Ingredients: 8oz pasta shells, cooked 4 bacon slices, chopped and crumbled 1 Tbsp garlic powder 3/4 cup heavy whipping cream 8oz cream cheese 3oz parmesan cheese, shredded 2 Tbsp ranch dressing 1 Tbsp ranch dressing seasoning (homemade or store bought) pepper 3 chicken breasts, cooked and shredded 2 cups mozzarella cheese PAM cooking spray 2 shakes of Basil Directions: Preheat oven to 375. My very first food blog EVER was an Easy Potato Soup recipe HERE using frozen hash browns, bacon bits and other ingredients. I never knew that making that specific recipe would lead to 139,301 views! YES you read that number correctly! That recipe was the starting point to turning my blog into a food blog. Yesterday was 65-70 degrees (not even kidding - and for mid-February this is crazy!) and I don't necessarily like making soup or warm soup on hot days but we had some potatoes that were days away from going bad so I thought a crockpot recipe would be easy. NBA All-Star weekend has always been one of my favorite weekends. It consists of a Celebrity basketball game, All-Star game, 3-point shootout, skills challenge and more. I decided to write this blog and hopefully complete it before the 3-point shootout. It's so fun to see how players in the NBA make 3-point shots within 60 seconds. Healthier Swedish Meatballs

Is anyone else so excited that Monday is a holiday? I love what I do but it is nice to have a little break and, every once in awhile, a 3-day weekend. I have two blogs to catch up on and hopefully I'll be able to get both completed this weekend. On a happier note, it is Valentine's Day so I hope everyone has an amazing and special Valentine's Day! Kevin and I went to the casino last week so that was our early Valentine's time together. We may take Jace to go see the new Sonic movie - he has been talking about this movie for months! What are your Valentine's Day plans? A few nights ago I made delicious healthier Swedish Meatballs. I used Ground Turkey and Ground Beef as well as seasonings, egg, and breadcrumbs. I didn't have the noodles that you normally use so I just made Shells and it worked perfectly. I can't remember a time where I cooked drumsticks in the crockpot - normally I cook them in the Air Fryer. If you don't have a lot of time, a crockpot dinner such as this one would be perfect. We served ours with green beans and had strawberries with sugar on top. The recipe was pulled from HERE and we made ours below. The original recipe calls for one pound of drumsticks but, let's be real, that won't serve a family of three so I doubled some of the recipe. The below recipe includes what I made with the doubled recipe. Ingredients: 4 Tbsp Honey 1/2 Cup Soy Sauce 4 Tbsp Seasoned Rice Vinegar 2 Tbsp Chili Paste 2 Tbsp Onion Powder 2 Tbsp Garlic Powder 2 Tsp Cumin 1/2 Tsp Cayenne Pepper 1 Tsp Chili Powder 3 Tsp Baking Powder 9 Chicken Drumsticks Directions: In a bowl, add all ingredients except the baking powder and chicken drumsticks. Easy Baked Taco Casserole

I really don't know how I continuously fall behind on blogs. I guess it just seems like I'm constantly busy with new and different opportunities. One thing has stayed the same - and that's the fact that I still cook almost every night. Kevin and I had an early Valentine's Day celebration and went to the casino Saturday night. I came home with $400 after only spending $280 so that's not bad. Most of the time I win and then lose all my money. We found a machine that kept paying out for maybe 30 minutes straight. I think we got up to about $850 and then I went down to $500 and then spent some more. Proud of myself for actually coming home with money. On that positive note, I won $50 about a week ago doing a giveaway, a $25 Nike gift card from a giveaway and I'm still waiting on a $100 Gymboree card that I won a few months ago that said I should receive it in February. If you don't have the time to make an elaborate meal, this Shake N Bake Chicken Breast is the perfect recipe for you. It's so easy and requires less than 10 ingredients. Ingredients: 3 boneless skinless chicken breasts 1/2 cup coconut flour 2 1/2 tsp salt 1/2 tsp pepper 2 tsp paprika 1 tsp cumin 1 tsp tarragon leaves 1/2 tsp garlic powder 1/2 tsp onion powder vegetable oil Directions: Preheat oven to 450 degrees.
