Alright you guys, one final Thanksgiving appetizer/side dish recipe before Thanksgiving tomorrow. I'm hopeful that if you haven't started cooking yet, that you can enjoy these before tomorrow. This recipe is so good, I had to steal a little bite before sharing ;) It's a little more complicated of a recipe but worth it. The original recipe is from Martha Stewart and I changed a few things to make it my own. If you make this, please let me know below in the comments!  Ingredients: 5 tbsp butter salt and pepper, to taste 3 cups elbow macaroni 1 can evaporated milk 2/3 cup milk 2 large eggs 1/2 tsp seasoned salt 1/4 tsp garlic powder 8oz sharp cheddar cheese, shredded 8oz Mexican blend cheese, shredded Paprika, for topping Directions: Take 1 tbsp of the butter and use it to butter a baking dish. Set aside. Bring a large pot of water to a boil, add salt and macaroni and cook al dente, about 7 minutes. Drain and return to the pot. Add the remainder 4 tbsp of butter to the macaro

Easy Deviled Eggs

My first Thanksgiving recipe (or any holiday) is easy Deviled Eggs. The original recipe was found HERE . I accidently dropped one egg :( So I put less mayonnaise in. My recipe is below. So easy and perfect for a Thanksgiving meal. The original recipe calls for 6 eggs which is perfect because it's only Kevin and I this year. If you need more, just adjust the recipe accordingly.  Ingredients: 5 large eggs 2 tbsp mayonnaise 1 tsp mustard 1 tsp apple cider vinegar salt and pepper to taste paprika for garnish Directions: Bring a pot of water to a boil. Turn off and move pot to a different burner. Place the eggs in the water using a spoon or skimmer and put back on the burner. Turn heat back to high and set a timer for 14 minutes.  While the eggs are boiling, prepare an ice water bath and set aside.  After 14 minutes, remove the eggs from the water and place in the ice bath. Once the eggs have cooled completely (30-60 minutes), peel them and cut them longways.  Remove the yolk and put it

Chicken Parmesan Pasta

Alright you guys, this will be final blog before I start putting together some Thanksgiving appetizers and even a Turkey recipe. I'm really hoping to put them together before Thanksgiving. I'm starting on some recipes today so fingers crossed! Last night we made this Chicken Parmesan Pasta . The original recipe is from Eating Well and we changed a few things to make it our own below. Kevin added spaghetti sauce to his because the original recipe doesn't include spaghetti sauce. I didn't add it to mine and it was still good. One Pot Beef Stroganoff

So my Broncos game starts in 35 minutes so I'm hoping I can complete this blog before then. I realized that I shared a Beef Stroganoff recipe not too long ago but this one is actually completely different. The other recipe used gravy where this one does not. Jace and I both agreed that we liked this one better. There are a lot of ingredients to it but it really wasn't that hard to make. We turned this into our own by using onion powder instead of onions, garlic powder instead of garlic, no mushrooms, basil instead of thyme, beef broth instead of beef stock, regular mustard instead of Dijon mustard, and used 1 tbsp of parsley instead of 2. Crockpot Creamy Chicken and Rice Recipe

You would think my days off work would consist of sleeping in and doing nothing. Wrong. I always end up being more busy than during the week. Tomorrow is my day off and I have to take Jace to get his final immunizations, have a check-up and go to the grocery store to stock up on some Thanksgiving food. I decided to write two blogs in one day because I don't know if I will have time tomorrow or even this weekend to write more.  I know my last blog talked a little bit about Thanksgiving but Kevin and I put together our list of food we are hoping to buy for Thanksgiving dinner. It's a lot of food for two people but we enjoy Thanksgiving dinner and looking forward to our time together. Below is our list and if you have any other ideas, please feel free to add to it! Chicken Fried Rice

With Thanksgiving a week away in an era of COVID, I'm just curious - what are all of your Thanksgiving plans? Kevin and I are going to have our first Thanksgiving together, just him and I! Jace will be in Vegas with his Nana and they will be seeing his Uncle out there so it'll just be the two of us. We have a huge menu planned out so hopefully I can share some Thanksgiving recipes with you guys. I also have off next Wednesday, Thursday, Friday, Saturday and Sunday! I think Wednesday and Thursday will just be cooking days. I'm not sure what the rest of the week will look like.  Anyways, before I talk too much about Thanksgiving, I wanted to share this Chicken Fried Rice recipe with you guys. Crockpot Pork Ribs

I have never cooked legit, non-boneless ribs in a crockpot before so I wasn't entirely sure what to expect. One thing I did not do which I should have was taken the fat off the ribs beforehand. Also, this recipe wasn't a "fall-off-the-bone" type, it was more of meat staying on the bone so if you like that, that's what to expect. Jace absolutely LOVED these (see photo below) and had like 3-4 of them. I had two. Next time though I would prefer grilling or baking. They were SUPER easy to make though. I didn't have cumin so I removed that from the dry rub and I also am not a huge fan of salt so I used 1/2 tsp instead of 1 tsp. I used 3 rib racks and half of a bottle of BBQ sauce instead of 1/2 cup. My full recipe is below. Let me know if you make these and what your thoughts are!
