I normally don't do long introductions to a recipe but this one was hard to put together because of my mindset so I wanted to share a few things. Today is a hard day. I was watching the college Pro Bowl about an hour ago and the announcer said that "Cody Bryant" had died. I wasn't going to look it up because I had no idea who Cody Bryant was but something pushed me to do so. I went to the Yahoo homepage and saw multiple articles about Kobe Bryant passing away in a helicopter accident. This could not be real. I started my love and obsession for basketball probably around age 10 or 11. I loved the Jazz and I was living in Utah. I would write and draw on printer paper and post photos around my wall in my room voicing and showing my love for the Utah Jazz. As I create more blogs this week, I realize that I really haven't eaten too healthy. I've been stuck at about an 8 pound weight loss. I did hit 10 pounds and then gained a few back. A healthy lifestyle is still my goal but I'm not perfect. I did go to the gym once this week and also hit more than 10,000 steps yesterday :) I'm on the right path. Now if the most delicious food wasn't unhealthy I would be in a much better space ;) Earlier this week I made this amazing Baked Raviolli with Two Cheeses and oh my gosh you guys! I did not think it would be this good! The original recipe is a Martha Stewart recipe HERE but we made it our own below. I will DEFINITELY be making this again! Huge hit in my household. Guys, what a week, am I right?! For it being a short week and for me having a 3-day weekend, it has still been insane. Monday we took Jace to the instacare for his cough that unfortunately got worse overnight. We also found out he had an ear infection so he stayed home with me on Tuesday. Wednesday was a 13 hour day for me plus Kevin's birthday so I tried to make it as special as possible with great ideas from my Facebook friends :) Today was a 5.5 hour day and then I had to go to the hospital for a diagnostic to see if I have sleep apnea (pft with post bronchodilator spirometry). They did some breathing tests which were so hard for me to "pass" at times. They also gave me this medicine to see if my throat would enlarge to see if I have anything wrong. They mixed it with air and I breathed it in. It was so odd but, on the plus side, nothing seems wrong with my lungs or breathing :) Now to just figure out why I woke up twice in the past five months and not being able to

In a few hours, we are expected to have this huge storm. So far, it has been rainy, windy and cold so I don't want to go to the grocery store. I purchased chicken a few nights ago and was browsing through recipes in hopes to find one where I had everything here already. Lo and Behold, I found one HERE ! I put this in the crockpot around 11am and it was done and ready to go by 5pm. So full of flavor and juicy! Ingredients: 3 boneless, skinless, chicken breast 1 cup salsa 1.5 tbsp worcestershire sauce 1.5 tbsp soy sauce 1 tbsp chili powder 1 tsp paprika 1 tsp ground cumin 1 tsp onion powder 1 tsp garlic powder 1/2 tsp salt 1/2 tsp pepper tortillas sour cream shredded cheese other favorite toppings Directions: Add all of the ingredients in a slow cooker. Completely coat the chicken with the spices and sauce. Slow cook for 6 hours on low. Easy Keto No Bean Turkey Chili

I don't know about where you are, but here in Central California, it has been freezing lately. And by freezing, I mean in the 30's. I know, I know, it's NOTHING like those 25 years of Utah winters that I moved away from. But with the cool weather comes warm meals. Last night I made this Keto Turkey Chili because it didn't cost a lot, was perfect for the weather, and like I say in almost all my recipes - it was easy to make. I molded the original recipe into my own below. We used turkey instead of ground beef, emitted green pepper, jalapeno, green chilis, tomato paste and garlic cloves. Ingredients: One pound ground turkey 1 10oz can diced tomatoes, undrained 1 15oz can tomato sauce 1 32oz carton of beef broth 2 tbsp chili powder 1 tsp basil 1 tsp cumin 2 tsp garlic powder salt and pepper, to taste Directions: Brown the ground turkey over medium heat in a sauce pan. Last week I was looking for an easy recipe to make that wasn't too bad for us health-wise but simple. I saw a video on Facebook from Tasty where they made and prepared the Soy Sauce Honey Chicken for meal prepping. We did have some leftover for meal prep but mainly ate all of it in one night :) It was "Tasty" - no pun intended. The link to one of the soy sauce chicken Tasty recipes is HERE . I don't have the link to the video. We didn't add cauliflower or bell pepper and made this recipe more of our own and adapted it to what we like and wanted. Ingredients: - 3 chicken breasts, cubed - 2 cups broccoli - 1/2 cup carrots - 1/2 cup soy sauce - 1/4 cup honey - 1 tsp minced garlic - salt and pepper, to taste - olive or vegetable oil, to cook the chicken in Directions: Use olive or vegetable oil and place in a pan on the stove. I will admit that the last 3-4 nights I have not been eating super healthy (biscuits and gravy, general tso's chicken, etc) but this recipe is one that boyfriend picked out and after the first bite, OMG. We bought chicken breasts at Smart and Final and we had four chicken breasts for $8. I could have used one chicken breast in this recipe as that what it calls for, but I used two so I ended up doubling the recipe, or making two batches. Both turned out amazing. We also added broccoli and Jasmine Rice. The original recipe was found HERE but we made ours different enough since I didn't have some of the items. This chicken is legit and, although it took awhile to make, it was. SO. GOOD. And very unhealthy, I know. It's hard to balance healthy eating with non-healthy eating but everything homemade is better. Easy Homemade Hamburger Helper in the Cast Iron Skillet

I was putting together a grocery list today and asked Kevin (boyfriend) if he wanted me to add anything. He said to put down Hamburger Helper. Instead of just purchasing the boxed Hamburger Helper I told him we could make our own (and we all know that I love to cook!). This version was super easy (and a little messy) and the recipe originated HERE . It's not a healthy recipe but I do eat good or healthy most of the time so it's ok to have a carb meal every once in awhile :) Ingredients: -1 lb ground beef -2 cups water -2 cups beef broth -1/2 package (2-3 cups) of uncooked elbow macaroni -2 tbsp onion powder -1/2 tsp garlic powder -1 tsp paprika -1 tsp cayenne pepper -1 small can of tomato paste -Salt and pepper to taste Directions: Brown ground beef in a skillet over medium until no longer pink, 7-10 minutes. Easy Taco Seasoned Beef Lettuce Wraps

I have been wanting the Wholesome Yum Easy Keto Cookbook for MONTHS and I finally got it for Christmas (Thanks BF!) I was off work for 9 days so I decided to take the time and go through my cookbook, write down some recipes, and start making some delicious meals. One of the first meals I made was the Thai Beef Lettuce Wraps on page 69 of the cookbook - can also be found HERE . Since we don't like fish sauce, coconut aminos were too expensive, and we didn't want bell pepper, we ended up changing the recipe quite a bit. I just used this recipe as a reference/guide and we ended up making taco-seasoned beef which was much more flavorful. I can't say it was low carb but it was still delicious. I also am a huge fan of butter lettuce which was used in the recipe. Enjoy! Low Carb Chicken and Keto Waffles

I'm sure you have seen the memes going around social media that the time between Christmas and New Year's is so confusing. This was so true for me. I worked for the first time in nine days and it's weird to me that today is Friday. What was even more surprising is when I asked Kevin what he wanted for dinner tonight and he actually said he wanted Keto Chicken and Waffles. Ummmmm....what?? So he sent me a recipe for chicken and I used my recipe for waffles. For those who aren't aware of my journey, I have been eating Low Carb/Keto since the end of June and I'm down about 10 pounds. I cook most of the week so usually my boyfriend and son eat whatever I make. I have two different recipes that I made below - one for the Low Carb Fried Chicken and one for the Keto Waffles .
