California Breaded Chicken

I am finally caught up on my blogs! It has taken so long but I'm so happy to finally be caught up. That means that moving forward, I will be posting (hopefully) closer to when I actually make them :) This recipe we made last week and it's called California Chicken and it is a Noom recipe.  We used lime juice instead of lemon peel and whole wheat breadcrumbs instead of regular.  Ingredients: 1 tbsp whole-grain mustard 1 egg white 1 cup whole wheat breadcrumbs 1/3 cup grated parmesan cheese 1 tsp lime juice 4 boneless skinless chicken breasts, cut into halves for thinner slices and eventually cut into tenders  Directions: Coat a cast iron skillet with nonstick spray. Preheat the boiler. In a shallow bowl, mix the mustard and egg white. Beat with a fork. In another bowl combine the breadcrumbs, parmesan cheese and lime juice.  Dip the chicken in the mustard mix, turn to coat and then into the breadcrumb mixture.  Place the chicken in the skillet. Applebee's Chicken Won Ton Tacos

Happy Tuesday! I went and visited my cousin yesterday and spent the entire day with her so I'm literally so confused on what day it is. It was much needed to spend time with her though - we did a 1 hour 40 minute hike, had lunch together, went to Goodwill, and got pedicures! It was perfect and I wish every day was like that. Today, back to the grind. I worked 8 hours and wanted to finish the evening with a blog.  I actually made this as one of my first recipes when I started Noom on April 1st. This recipe is for Applebees Chicken WonTon Tacos. They were SO good! Healthy Banana Split

I first have to say, how exciting is it to see the Denver Nuggets win the championship? I am a HUGE Denver Broncos fan and I saw how good the Nuggets were a few years ago (they beat my Jazz) so I have been rooting for them this year. I'm so happy for them! Anyways, on to the recipe. This is another recipe from Noom (they call it Whip-It-Good Banana Split) and it's for a healthier banana split pudding recipe. Super easy to make. I added some chocolate chips on top but it tastes just like a banana split or banana cheesecake. Huge win for our house! Ingredients: Zero sugar cool whip topping One banana Jell-O sugar free fat free cheesecake pudding Good & Gather skim milk Cherries, to top Directions: Whisk together milk and pudding mix in a bowl for about two minutes. Spoon half of the dessert into a glass cup. Top with bananas and the remaining pudding (I divided this into two bowls). Top with whipped topping and cherries. Let sit in the fridge for 15-30 minutes. Frozen Raspberry Dessert

Named, "Frozen Raspberry Fool" by Noom, this recipe is straight perfection. With only five ingredients, this smoothie/ice cream recipe is super easy to make. This recipe will be one that I will make over and over! And it's a perfect summer recipe. Ingredients: 1 12oz package of frozen unsweetened raspberries 1/4 cup powered sugar 1/2 cup heavy cream 1/2 tsp vanilla extract Fresh raspberries for garnish Directions: In a blender, combine the frozen raspberries until finely shaved, scraping the sides occasionally. Add the sugar, cream and vanilla and process until smooth, or just blended. Refrigerate for 15 minutes and top with fresh raspberries.  

Crockpot beef tips

Happy Sunday! Although it's another day of work, I thought I would take a quick break and catch up on some blogs. Next week I have such a busy schedule and will be missing two days of work so I'm trying to make up as much as I can this weekend.  Anyways, I made this recipe a few weeks ago and it was too delicious to not share. This recipe is from Weight Watchers and is a beef tips recipe. I combined ours with rice to make a delicious meal (it may not look great in the photos but I only share recipes that we liked!) The original recipe for this one can be found HERE .  Ingredients: 1 1/2 pounds beef sirloin, cut into pieces 1 tbsp onion powder 1 10oz can cream of mushroom soup 1 tbsp worcestershire sauce 1/4 cup water 1/4 cup fat free sour cream Black pepper to taste Directions: In a saucepan, brown the beef tips in vegetable oil or PAM cooking spray. Healthy Kung Pao Chicken Recipe

Happy Saturday! I am so excited and thankful for weekends. Although I have to work today (busy week next week!) I am still so grateful for days where I don't feel rushed or have to live by a schedule. Jace got out of school for the summer yesterday - I can't believe he will be in 7th grade next year!  Anyways, earlier this week I made this delicious, healthy, Kung Pao Chicken. The original recipe can be found HERE . We used ground ginger instead of ginger and garlic powder instead of garlic. We did not use celery ribs, red pepper, green onions, or sriracha. Ingredients: 1 1/2 pounds boneless, skinless chicken breasts, chopped 4 tsp sesame oil 1 tbsp garlic powder 1 tsp ground ginger 2 tbsp low sodium soy sauce 1 tbsp honey Black pepper, to taste Peanuts, to taste Directions: Add 2 tsp sesame oil in the pan. Add the chicken, garlic powder and ground ginger and cook for 5-7 minutes until cooked through and remove from heat. In a bowl, stir together the soy sauce, honey and pepper

Creamy Applesauce Dream

This apple dessert recipe is from Noom and I made it exactly like the recipe called for (except I added one scoop of ice cream instead of greek yogurt). So delicious and would definitely make again!  Ingredients: 4 medium apples, peeled, cored and quartered 1/4 cup orange juice 2 tsp vanilla extract 2 tsp cinnamon 1/4 cup greek yogurt (optional, or splurge like I did and do a scoop of ice cream) Directions: In a large pot, combine the apples, orange juice, vanilla and cinnamon. Cover and simmer for 30 minutes or until the apples are tender, stirring occasionally. Mash the apples with a fork or potato masher until smooth. Top each with yogurt or ice cream. Enjoy!

Healthy Deviled Eggs

I love, love, love deviled eggs and I was a little adamant to try this Super Creamy Deviled Eggs recipe from Noom because it used white kidney beans and shredded carrots. I was surprised that I absolutely loved them! These are a great healthier alternative to your regular deviled eggs. I did not add celery or scallions to these deviled eggs like the original recipe. These eggs are perfect for Father's Day, Easter, Mother's Day, the 4th of July, and any other special holiday - or you can eat them year-round if you prefer :) Ingredients: 6 eggs 1/3 cup white kidney beans (rinsed and drained) 1.5 tbsp light mayonnaise 1/2 tsp mustard powder 1/4 cup shredded carrots 1/4 tsp pepper Directions: Place the eggs in a saucepan and cover with cold water. Bring to a boil over high heat.  Reduce the heat to low and simmer slowly for 12 minutes. Cool under cold running water. Shell by tapping the eggs against the side of the pan and gently remove the shells.  Cut the eggs lengthwise in half.

Chicken Katsu Curry

As most of you know, curry has a very distinct taste so I was very hesitant to try this Chicken Katsu Curry recipe. This recipe originally was from SB Foods USA and can be found HERE . As always I made this recipe my own. We don't like onions so added onion powder to the flour. The chicken is fried so it's not the best but I tried to add a healthier spin by using wheat flour and wheat breadcrumbs. For the curry sauce we used Good&Gather Panang Curry Simmer Sauce.  Ingredients: 1 tbsp onion powder Vegetable oil, for frying 1/2 cup Good&Gather Panang Curry Simmer Sauce Jasmine rice, cooked 3 large chicken breasts, flattened (I used a rolling pin to make them thinner) 1 cup whole wheat flour 1 tbsp onion powder 2 organic eggs, beaten 1 cup whole wheat breadcrumbs Pepper to taste Directions: In a skillet, place the vegetable oil in the skillet on medium-high until you can place a breadcrumb in there and it sizzles.  For the chicken breast, flatten chicken and dip in the flo

Easy Honey Garlic Chicken Recipe

One more chicken recipe for the day! This is a Keto Honey Garlic Chicken recipe from Keto Cooking Christian that can be found HERE . Just like all of the recipes, we made this one our own. The original recipe called for chicken thighs and instead, I did chicken breasts cut into pieces. We always swap out garlic with garlic powder and I didn't have liquid aminos so I switched that out for soy sauce. Ingredients: 2 large boneless, skinless chicken breasts, cut into chunks 1/3 cup honey 1/3 cup fat free chicken broth 1 tbsp garlic powder 2 tbsp unsalted butter 2 tbsp olive oil (I used Heraclea, I won a year supply of olive oil from them!) 1 tbsp soy sauce 1 tbsp rice vinegar 1 tsp sesame oil Black pepper Directions: Pepper all of the chicken chunks. Heat a large skillet to medium heat and add the butter and olive oil. Once the pan is hot and butter has melted, add the chicken. Cook for 5-7 minutes, flip, and cook for another 5-6 minutes or until they are completely cooked. Remove the

Healthier Teriyaki Chicken Stir Fry

Good morning and happy Saturday! I'm so grateful for weekends. This weekend I plan on recharging, cleaning, and getting some things done in my home. Things have been stressful lately so I'm just trying to take it easy. I am still looking for a housecleaner/domestic assistant, I think that will really help eliminate some of my stress.  A few nights ago I made this healthier Teriyaki Chicken Stir Fry. Let me tell you the photos don't really do it justice. I typically don't have seconds of dinner but I did on this one. So good!  I did change this up a little bit. The original recipe is from Keto Cooking Christian and can be found HERE . I'm on the Noom diet so I did make a few adjustments. Although I should be eating more peppers, I did eliminate red peppers. My family doesn't like onions so I replaced onions with onion powder. I used two different teriyaki sauces which made it so good. We did not use scallions or almonds. We also exchanged garlic for garlic powder
