Pulled Pork Sandwich

One final pre-Christmas or the day-after-Christmas recipe when you no longer want to cook a huge, fancy meal. This recipe is actually for pulled pork with bourbon peach barbecue sauce. We didn't do the sauce and instead turned it into pulled pork sandwiches. This recipe is from My Recipes and can be found HERE. I actually forgot to take a photo of the actual sandwiches (whoops) but they were good!

We don't use salt so I removed the salt and then I removed the entire sauce from the original recipe.

Ingredients:
2 tsp paprika
1 tsp pepper
Pork shoulder roast
Cooking spray
1/2 cup organic chicken broth
1/3 cup balsamic vinegar
1/3 cup molasses
2 tbsp lower sodium soy sauce
1 tsp crushed red pepper
1 tbsp garlic powder
1 tbsp onion powder


Directions:
Heat a large skillet over medium-high heat. Combine paprika and pepper and rub over the pork. Coat a pan with cooking spray and add the pork to pan. Cook 10 minutes, turning after 5 minutes to brown both sides. 


Place in a slow cooker. 

Add chicken broth, balsamic vinegar, molasses, soy sauce and red pepper to skillet, bring to a boil and stir. Pour over pork and top with garlic powder and onion powder. Cover and cook on low for 6 1/2 hours until pork is tender. Shred with two forks and place on hamburger buns. Enjoy!
