One Pot Cajun Chicken Pasta

Another day, another pasta recipe. A few nights ago we made this Cajun Chicken Skillet Pasta meal from Buns in my Oven and it was divine! We used Farfalle pasta (aka bowtie pasta) instead of fettuccine, we did not use bell pepper, we replaced garlic with garlic powder, replaced heavy cream with milk, and parmesan cheese with mozzarella cheese. This was a very comforting meal and perfect on the cooler days.

Ingredients:
8 oz bowtie pasta
2 large boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp butter (we use unsalted)
1 tbsp cajun seasoning
8oz turkey smoked sausage
1 tbsp garlic powder
1 1/4 cups milk
3/4 cup mozzarella cheese
1 tbsp parsley


Directions:
Bring a large pot of water to a boil and cook the pasta to al dente, drain. While the pasta is cooking, chop the chicken into bite-sized pieces. Heat a skillet over medium heat and add the water and butter until the butter has melted. Season the chicken pieces with half of the Cajun seasoning. Add the chicken to the skillet and cook, stirring often, about 7 minutes. Remove and set aside. 

Add the sausage to the skillet and add the remaining Cajun seasoning and cook 5 minutes, stirring often, until browned. Stir in garlic powder. Remove from pan and set aside. 

Add the milk to the pan an bring to a simmer. Remove from heat and add mozzarella cheese until melted. Return the sausage, pasta and chicken and stir. Sprinkle with parsley or oregano.
