Hibachi Chicken Fried Rice

One final Sunday recipe - Hibachi Chicken Fried Rice. This was an amazing recipe. The original recipe is from All Recipes and their recipe was just fried rice - we added chicken to ours. We eliminated green onion, used less olive oil and used garlic powder in place of garlic.

Ingredients:
Boneless, skinless chicken breast, cut into pieces
2 large eggs, beaten
2 tbsp olive oil
1 tbsp garlic powder
2 cups cooked white rice
3 tbsp organic soy sauce

Directions:
Heat a wok or pan over medium-high heat. Add 1 tbsp olive oil. Add chicken pieces and stir fry 5-7 minutes or until cooked and no longer pink. Move to a plate. 

Add 1 tbsp olive oil and add eggs. Cook and stir eggs until cooked through, 1-2 minutes (or less). 

Add chicken back in as well as garlic powder. 

Mix in cooked rice and cook until 1-2 more minutes. Add soy sauce until rice mixture is evenly coated, about 3 minutes. Enjoy!
