Chicken Gyros with Tzatziki

I knew it would be a busy week and no time for blogging. But, I'm here now. I am officially down 5.1 pounds in 27 days. I'll admit though, I didn't eat too healthy this weekend. Working to get back on track tomorrow :) Last week we made this recipe - Greek Chicken Gyros with Tzatziki. It was an interesting one because I've never made my own Gyros before. Ingredients:
2 pounds boneless skinless chicken thighs

Ingredients for Marinade:
3 tsp garlic powder
1 tbsp apple cider vinegar
3 tbsp lemon juice
1 tbsp EVOO
 3 tbsp Greek Yogurt
1 1/2 tbsp dried oregano
1 tsp salt
Pepper

Ingredients for Tzatziki
1 cucumber
1 1/4 cups Greek Yogurt
1 tbsp lemon juice
1 tbsp EVOO
1 tsp garlic powder
1/4 tsp salt
Pepper

Ingredients for Salad:
1 tomato, diced
1 tsp onion powder
1/4 cup basil seasoning
salt
pepper

Ingredients to serve:
Pita Bread or Flat Bread

Directions for Marinade:
Place the marinade ingredients in a ziplock bag and massage. Add the chicken and massage to cover the chicken. Marinade for at least 3 hours, up to 24 hours.



Directions for the Tzatziki:
Peel the cucumber and cut lengthwise. Use a teaspoon and scrape out the seeds. Grate the cucumber using a box grater. Wrap in paper towels and squeeze out liquid. Place the cucumber in a bowl and add remaining ingredients to combine. Set aside for 30 minutes.



Directions for the Salad:
Combine ingredients in a bowl.

Directions for the Chicken:
Heat 1 tbsp of EVOO in a fry pay over medium high heat. Remove chicken from marinade and cook until golden brown and cooked through (2-5 min per side). Remove chicken and put on a plate. Cover with foil.

                                    

Assemble Gyros:
Cut chicken thighs. Get a piece of pita bread, place salad in the middle, top with chicken and then Tzatziki.
