boneless county style pork ribs

So many people say, "You are such a good cook!" and all I can respond with is, "I'm just good at reading directions" and sometimes every now and then I'll add a few different ingredients or change it up some how. I actually didn't think this Boneless Pork Rib recipe was going to turn out because...I missed a direction. But it worked out fine and both Kevin and I loved it! 

This recipe is from MyRecipes and it's a Boneless Pork Rib recipe. Besides changing the directions, we did not use chipotle Chile power - instead we substituted it for Mrs. Dash Southwest Chipotle Seasoning Blend. Because we try and eat a lower-salt or low-sodium diet, anywhere we can replace salt, we choose to do so. We also didn't use or have chipotle chiles in adobo sauce. Also, we LOVE olive oil and there are a lot of calories in it - but we typically do several tablespoons of it. It's hard to resist! 

Ingredients:
2-3 tablespoons olive oil
1 1/2 tsp paprika
1/4 tsp Mrs Dash Southwest Chipotle
1/4 tsp garlic powder
1/4 tsp onion powder
1 3/4 tsp salt (we did actually use salt here)
1 tsp pepper
4-5 boneless country-style pork rib strips
1 cup ketchup
1 tbsp molasses
1/4 cup apple cider vinegar
1/2 tbsp worcestershire sauce

Directions:
Preheat oven to 300 degrees F. Coat the bottom of a sheet pan with olive oil. Stir together Mrs. dash, paprika, garlic powder, onion power, 3/4 tsp of salt and 1/2 tsp of pepper in a small bowl until blended. 

Sprinkle all sides of ribs with mixture and place in a single layer on a sheet pan (in the photo, our sheet pan looks dirty - this is what happens when you have hard water - it has destroyed so many of my dishes. I use detergent, a booster, and Finish and even that combination doesn't work - if you have any ideas, please share!) I missed this step and did not cover with aluminum foil. I baked, uncovered for about 3 hours. 


Whisk together ketchup, molasses, vinegar, Worcestershire, remaining salt and pepper in a medium bowl. Pour half the sauce into a small bowl and reserve for serving. Remove ribs from oven and increase oven temperature to 450 degrees F. Baste ribs with remaining sauce and bake about 20 minutes. I ended up cooking about 10-20 minutes more until they were a little bit softer. Serve with Asparagus and potatoes.
