Easy Mozzarella Chicken Recipe

I can't believe Christmas is in TWO DAYS!! I wanted to share this recipe before Christmas in case you are looking for an easy recipe to make before Christmas (or even on Christmas) and anytime in between. It was surprisingly tasty and the original recipe was pulled from Southern Living HERE. This recipe is as good as it looks. 

Ingredients:
1 cup whole wheat panko breadcrumbs
3/4 cup mozzarella cheese
2 tsp That's Amore by Pinch Me Market
1 tsp black pepper
3/4 cup wheat flour
2 large eggs, beaten
Chicken breasts, pounded flat
2 tbsp olive oil (plus some)
2 tbsp unsalted butter (plus some)

Directions:
Stir together the breadcrumbs, mozzarella, That's Amore, and pepper in a medium bowl. 

Place the flour in another bowl and the eggs in a third bowl. 

Dredge the chicken breasts, one at a time, in flour, dip in eggs, and then in the breadcrumb mixture and set on a plate. Heat 1 tbsp olive oil and 1 tbsp butter over medium high heat in a large nonstick pan. Add chicken breasts to the skillet, two at a time, and cook without flipping, 3-4 minutes. 

Flip and cook another 3-4 minutes. Transfer to a plate and repeat the process, using more butter and olive oil as needed. *I would suggest turning the heat down a little bit if needed or the chicken will burn like mine, it ended up fine but keeping the heat a little lower will prevent that.
