Baked Chicken tenders

If you are looking for a delicious and easy chicken tender recipe, this is it! It seems like a lot of ingredients but the original recipe (can be found HERE by Real Simple) had three extra ingredients for the sauce. We just used BBQ! The original recipe called for mustard powder - I thought I had some but I didn't. So we just eliminated it altogether. We served the chicken tenders with jasmyne rice and asparagus.

Ingredients:
10 chicken tenders - boneless and skinless
1 tsp salt
1/4 tsp pepper
1 cup flour
1 1/2 tsp paprika
1/2 tsp garlic powder
4 large eggs
1/4 cup milk
5 tbsp unsalted butter
2 cups breadcrumbs

We eliminated mayonnaise, mustard and honey but if you want to make a honey mustard sauce, you can always add those in.

Directions:
Preheat oven to 450 degrees and spray a baking sheet with PAM. I laid the chicken on the sheet and then seasoned with salt and pepper.

In a bowl, whisk the flour, paprika, garlic powder, salt and pepper. Whisk eggs and milk in another bowl.

In a skillet on the stove over medium heat, melt the butter. Add two cups panko and stir occasionally until golden brown. Transfer to a plate.

Dredge chicken tenders in the flour mixture, shake off, dip in egg wash and coat with panko. Place all tenders on a baking sheet and bake about 8 minutes.

Flip and cook 8 more minutes.

Serve with BBQ sauce, asparagus, and Jasmyne rice.
