bang bang chicken

A few days ago we made Bang Bang Chicken for the first time. I must admit, it had a very...different....taste at first, and it took a second to get used to. But once I started eating more and more, I couldn't stop. Jace ate seconds and Kevin ate his entire plate. Jace was already asking for more two days later. I hope you enjoy this recipe like we did! The only thing we didn't have was the Shichimi Togarashi (Japanese red pepper condiment). Also, the sauce looks super weird and it sounds like it may not be good, but trust me, it was delicious. Jace (he is 11 years old) doesn't like Mayonnaise and knew it was in there, but once it was combined, he loved it!

Ingredients:
1/3 cup milk
1 egg
2 large boneless, skinless chicken breasts cut into cubes
1/4 cup potato starch
1/4 cup flour
1/2 tsp salt
1/4 tsp pepper
Vegetable oil for frying
1/4 cup mayonnaise
2 tbsp honey (we used this honey)
2 tbsp sweet chili sauce (we used Sriracha hot chili sauce)
1 tsp gochujang (korean hot pepper paste)

Directions:
Whisk together milk and egg in a large bowl. Add the chicken and let it marinate for 15 minutes. While it's marinating, add potato starch, flour, salt, and pepper in a large bag. Shake the bag until well-combined. From the marinade, add the chicken straight to the starch ingredients. Shake it until completely coated. 

Heat oil in a large skillet until oil sizzles - medium/high. Take the chicken out of the bag and cut into bite size pieces. Once the oil is hot enough, add the chicken in the hot oil for about 2 minutes. Transfer to a paper towel. 

Turn the heat to high and re-fry the chicken for another 2-3 minutes - making sure the chicken is all the way cooked through. While this is cooking, whisk together the mayonnaise, honey, sweet chili sauce, and gochujang in a bowl. Add the chicken and toss to coat. 

Enjoy with rice and corn or other sides.
