Davita Blueberry Muffins

My favorite go-to meal that never gets old is definitely breakfast for dinner. That has been a fan fav for most of my life. Two nights ago I decided to add these blueberry muffins to the mix. They are kidney-friendly so they focus on sodium and phosphorus. Here are the substitutes I made - Monkfruit for regular sugar, sweetened condensed milk for rice milk, olive oil for vegetable oil, lemon juice for lemon zest, fresh blueberries for frozen blueberries. Feel free to make the original adjustments (the reviews on the site were good for the original recipe but I didn't have some of the items so I just created substitutes.) Ingredients:
2 cups flour
2 tsp baking powder
1/2 cup Monkfruit
2 medium eggs
1 cup sweetened condensed milk
1/4 cup olive oil
2 tbsp lemon juice
1 1/4 cup fresh blueberries

Directions:
Preheat oven to 375. Combine flour, baking powder and monkfruit in a bowl. In another bowl combine the eggs, sweetened condensed milk, olive oil and lemon juice. 

Pour liquid ingredients into the flour mixture. Mix until combined. Gently fold in blueberries. Lightly spray 12 muffin tins with cooking spray and fill each to the top with batter. Bake for 25 minutes. I add unsalted butter on mine and they turn out pretty good for being healthy :)
