sesame chicken bites

Another day, another chicken recipe. I used to be so picky about chicken but it seems like that's all we eat now. This recipe is for Baked Sesame Chicken Bites, initially from Clean Food Crush and can be found HERE. We switched out gluten free flour to regular flour and eliminated salt as we don't use salt often.

Ingredients for the chicken:
1 pound chicken breast cut into cubes
Ground pepper to taste
1/4 cup flour
3 eggs
1 cup parmesan cheese
1 tsp onion powder
1 tsp garlic powder
1/4 cup Sesame seeds (if you would like)

Ingredients for the sauce:
1/2 cup coconut aminos
2 tbsp rice vinegar
1/4 cup honey
1 tbsp sesame oil
1/2 tsp red pepper flakes
1 tbsp cornstarch
2 tbsp water

Directions:
Preheat oven to 375 and spray a large cookie sheet with PAM or cooking spray. Season chicken with pepper. Place chicken in a large bowl and add the flour and toss to coat chicken. Shake off excess.

Prepare two plates - one with beaten eggs and one with parmesan, sesame seeds, onion powder and garlic powder and combine.

Dip each piece of floured chicken into the eggs and then coat with the parmesan mixture. Place on a sheet pan in a single layer. Bake for 24-26 minutes, flipping halfway, until chicken is cooked and golden brown.



Meanwhile, in a medium saucepan (or in a bowl), add the coconut aminos, vinegar, honey, sesame oil and chili flakes. In a small bowl, mix the cornstarch and water together until smooth and add everyone  to a saucepan. Bring the sauce to a simmer and cook until thick, about 2-3 minutes.

Once chicken is finished, remove from oven and pour sauce over the chicken. Serve with broccoli and rice. Enjoy!
