Keto Lasagna Bake in the Cast-Iron Skillet

These past few weeks I've been so focused on purchasing Christmas gifts and building that blog as well as the 100,000 Views Giveaway that I've been accidentally putting my recipes on the back burner. I'm still adjusting to this new schedule of working five hours per day, helping Jace with homework, cooking every night and trying to get used to a new routine. I like this routine one better than my last.

Anyway, last night we had this Keto Lasagna Bake. Yes, I did eat a piece of toast with it but the lasagna didn't have any noodles so that was my "no carbs" part ;) Originally I found a recipe with Zoodles and I am not in any way shape or form interested in trying those. I bought them pre-spiraled once. I never ate them. So we decided to choose a recipe with zero noodles but tasted just like lasagna. We made ours in a cast-iron skillet (which I love by the way!). We changed ours up and made it our own below.

Ingredients:
1 pound ground beef
1 pound italian sausage
1 tablespoon italian seasoning
2 cups marinara sauce
1 tsp roasted garlic powder
1 tsp oregano
1/2 cup ricotta cheese
1 cup shredded mozzarella
2/3 cup shredded parmesan

Directions:
Preheat oven to 400 degrees. In a cast-iron skillet, brown the ground beef and sausage together until no pink remains. Drain the fat and return to the skillet.


Add italian seasoning, garlic powder, and oregano with the meat sauce and simmer for five minutes.



In a bowl, mix the ricotta, 1/2 cup of the mozzarella cheese, and 1/3 cup of the parmesan cheese. Add in oregano and garlic powder and fold in the bowl until combined.


Turn off the heat and make sure the meat is in an even layer. Place spoonfuls of the cheese mixture around the edges of the skillet and push them down with your spoon to the bottom of the pan. I also put a few in the middle.


Sprinkle the top with remaining mozzarella and parmesan and bake for 20 minutes. Garnish with more oregano.


I will admit, a year ago I would have had lasagna with noodles and 2-3 pieces of toast with butter. If you are avoiding carbs, don't have the toast but I only had one so I'm not too angry with myself ;) Enjoy with sides of vegetables or whatever side you prefer.
