The Perfect Chicken and Shrimp Fried Rice Recipe



A few nights ago my boyfriend made the most AMAZING Chicken and Shrimp Fried Rice. It wasn't too salty and I actually don't like shrimp but they were the jumbo pieces so I could easily take them out without tasting the shrimp flavor. The recipe we based ours off of is HERE but we made our own below.



Ingredients:
14 jumbo shrimp
2 chicken breasts
1/2 teaspoon kosher salt
freshly ground pepper
extra virgin olive oil
3 eggs, beaten
4 cups rice
1/2 of a bag of frozen peas and carrots
2 tablespoons soy sauce
1 teaspoon sesame oil

Directions:
Cook chicken until done. In a separate pan, toss shrimp in olive oil and sear shrimp on both sides (or until orange). Cook eggs separately and scramble. Put rice in separate pan and add everything in pan (shrimp, chicken, vegetables, soy sauce, sesame oil, salt, pepper, and eggs). Heat everything until sizzling hot and add more soy sauce to taste. Season to taste. Enjoy!
