Chrissy Teigen's Cheesy-Knife-and-Fork Meatball Subs from Cravings 2

I received the Cravings 2 recipe book from my boyfriend this Christmas and have already enjoyed several recipes including this one! The Cheesy-knife-and-fork Meatball subs were REALLY good but I have to say it probably took 1.5-2 hours to prepare everything, especially since the sauce is made-from-scratch! Everything is so good and we made enough for four servings. Just make sure you plan ahead of time to have time to make everything! Once again, we did change just a few things but overall it was pretty dang amazing!

Ingredients:

For the sauce:
6 tablespoons olive oil
garlic powder
1/2 cup tomato paste
3 cans whole peeled tomatoes in juice
2 teaspoons dried oregano
2 teaspoons dried basil
2 teaspoons kosher salt
2 teaspoons sugar

For the meatballs:
3/4 cup bread crumbs
1/3 cup milk
1 egg
1/2 pound ground beef
1/2 pound ground pork
3/4 cup mozzarella cheese
1 tablespoon garlic powder
1 teaspoon kosher salt
ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
olive oil

For the subs:
hot dog buns
4 tablespoons butter
garlic powder
8 round provolone cheese, half

Directions for the sauce:
In a pan, heat the oil over medium-high heat. Add garlic powder, tomato paste, tomatoes and their juice, the oregano, basil, salt, and sugar. Bring to a boil then reduce the heat and simmer until thickened, about 30 minutes. Blend the sauce in a blender until smooth. Return the sauce to the pan and simmer and cook for 15 minutes.





Directions for the meatballs:
Meanwhile, place the breadcrumbs in a large bowl. Add milk and stir to moisten. Let sit about 5 minutes. Stir in the egg, beef, pork, mozzarella, garlic, salt, pepper, oregano, and basil and gently mix everything together with your hands. Form the mixture into 15 meatballs, each slightly larger than a golf ball. In a skillet, heat oil over medium heat. Add the meatballs until they are brown on each side, turning so they don't get too crusty; about 10 minutes total. When the sauce is ready, gently drop the meatballs into the sauce and let simmer for about 30 minutes - or until the meatballs are all the way cooked through.



Directions for the subs:
Split the rolls open, add butter and garlic powder. Place each roll in a broiler about 2-3 minutes. Arrange three meatballs, four provolone cheese halves and some sauce on top of each bun and return to the broiler for a few more minutes. You can top with parsley or basil.
