Chrissy Teigen's Cool Ranch Taco Salad Recipe


I received the Cravings 2 cookbook as a Christmas gift from my boyfriend and this is the second recipe that I made. I think the photos in the cookbook were more beautiful than mine but overall, it was pretty good. I made the dressing and decided not to use it after all. My changes and edits are made below but Chrissy Teigen's full recipe of the Cool Ranch Taco Salad can be found HERE.

Ingredients for the beef mixture:
frozen corn (one bag)
1 tablespoon vegetable oil
1 pound ground beef
1 tablespoon paprika
2 teaspoon ground cumin
2 teaspoon garlic powder
2 teaspoon dried oregano
1 teaspoon chili powder
1 1/2 teaspoon salt
1 teaspoon pepper
1 15-ounce can of black beans, drained

Ingredients for the salad:
1 large head of iceberg lettuce, shredded
black olives
2 cups Cool Ranch Doritos
sour cream

For dressing I used salsa.

Directions for the beef mixture:
Heat a large skillet over high heat until really hot. Put corn in the pan and heat until the corn is charred, about 8-9 minutes. Remove to a plate. Let the pan cool for a bit and add the oil over medium-high heat. Add the meat and cook through about 5-6 minutes. Drain most of the liquid in the pan. In a small bowl combine the paprika, cumin, garlic powder, oregano, cayenne, salt, and pepper. Add this mixture to the meat a long with black beans and 1/2 cup water. Cook about 5 minutes. Remove from heat.



Directions for the salad: Arrange the lettuce in a big salad bowl and top with the beef-bean mixture. Mix in corn, and add in (optional) tomatoes, avocado and olives. Pour dressing or salsa over the salad and crumble the chips over the top. I also added cheese and sour cream on top.
