The BEST Macaroni and Cheese you will ever have!


On Monday night I asked the boyfriend if Macaroni and Cheese sounded good to eat because I didn't feel like cooking a huge meal. He said yes BUT he wanted to try a different kind of Mac and Cheese - baked. I don't think I've ever had baked macaroni before but thought it was worth a shot. The original recipe can be found HERE. To be honest, I was looking for an easy meal but this was NOT an easy recipe. But I have to say this was the most AMAZING Macaroni and Cheese I have EVER had. I'm not even kidding. So if you have some time and want to make a delicious meal (we had plenty leftover!) then try this Macaroni and Cheese!

Ingredients:
1 pound elbow pasta
1/2 cup butter
1/2 cup flour
1 1/2 cup milk
2 1/2 cups half and half
6 cups colby jack cheese, parmesan cheese, and mozzarella cheese, shredded
Salt
Black Pepper
1/4 tsp Paprika

Instructions:
Preheat oven to 325 degrees and grease a baking dish. Set aside. Bring a pot of salted water to a boil. Add dried pasta, drain, and drizzle with a little bit of olive oil. While water is boiling, toss cheese together and then divide into three bowls - 3 cups in one, 1 1/2 cups in one, and 1 1/2 cups in the other. Melt butter in a large saucepan over medium heat. Sprinkle in flour and whisk. Cook for one minute, whisking often. Slowly pour in about 2 cups of the milk and half and a half while whisking. Slowly pour in the remaining milk and whisk until smooth. Continue to heat over medium heat, whisking often until thick. Stir in spices and 1 1/2 cups of cheeses and stir to melt and combine. Stir in another 1 1/2 cup of cheese and stir until smooth. In a large mixing bowl, combine drained pasta with cheese sauce, stirring to combine. Pour half of the pasta mixture into the baking dish. Top with a 1/2 cups of cheese then top with pasta mixture. Sprinkle the top with the last 1 1/2 cups of cheese and bake for 15 minutes.
