Amazing and Delicious Chicken Enchilada Soup

Last night's dinner was Chicken Enchilada Soup. I was happy with how this soup turned out and all of it is gone! It contained a lot of ingredients but wasn't too hard to make. The original recipe was found HERE. Our version is below.



Ingredients:
olive oil
1 teaspoon onion powder
1 teaspoon minced garlic
1/2 cup flour
4 cups chicken broth
2 cups shredded chicken
10 ounce can red enchilada sauce
15 ounce can black beans
14.5 ounce can diced tomatoes
1/2 cup corn kernels
1 cup shredded cheddar cheese
2 tablespoons cilantro, chopped
salt
pepper
assorted toppings: tortilla strips, sour cream, avocado

Directions:
Heat oil in a large pot over medium-high heat. Add onion powder and minced garlic for 30 seconds. Stir in flour and cook for one minute. Pour in the chicken broth and stir until combined. Add the chicken, enchilada sauce, beans, tomatoes, corn, salt and pepper. Bring to a simmer and cook 10 minutes. Add the cheese on top. Add toppings and enjoy!
