Homemade Beef Empanadas from SkinnyTaste

My friend shared this Empanada recipe on Facebook from Skinny Taste. The original recipe can be found HERE. This recipe consists of homemade dough which, to me, was the hardest part. I added one Fage yogurt which I don't think was enough. The empanadas did turn out really really good and I was able to make about ten, but I would suggest using one cup of yogurt (and Fage yogurt) like the original recipe calls for. Here is my version:






Ingredients:
1/2 pound ground beef
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon paprika
1/4 teaspoon basil
1/4 teaspoon onion powder
2 tablespoons water
2oz tomato paste
2oz mild taco sauce
Shredded cheddar cheese (as much as you would like)

Ingredients for the Dough:
1 cup and 5oz of flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup Greek Yogurt (must be Stonyfield or Fage, not Chobani)
1 egg, beaten

Directions:
Brown beef in a large skillet. When no longer pink, add dry seasoning and mix well. Add the water, more onion powder, tomato paste, and taco sauce. Cover and simmer on low for 15 minutes. Uncover and simmer 12 more minutes until all liquid is gone.

Preheat oven to 375F. In a medium bowl, combine the flour, baking powder and salt and whisk. Add yogurt and mix with a fork or spatula until well combined - small crumbles. Flour a work surface and remove dough from the bowl. Knead it a few times until it's tacky but not sticky. It should not leave dough on your hand when you pull away. Roll the dough out until it's thin. I used a square cookie dough cutter and cut out 10 squares. Place 2 tablespoons of the meat mixture on each square and top with cheese. Brush the edges with egg wash and then fold over and crimp with a fork. Transfer to the baking sheet and brush the top with egg wash. Bake for 22 minutes or until golden.




Now these are not in any way, shape, or form, as glamorous as they show in the original recipe. It took me some time to figure out how to keep the meat in the dough and get the dough big enough to fold over. But they turned out amazing! If you have time to make this, I suggest you do. It was time consuming since I did make the dough from scratch but it was all worth it. The meat was so flavorful! Please let me know in the comments below if you made this recipe!
