One-Pan Healthy and Easy Sausage and Veggies

Do you guys know how hard it is to maintain blog posts and trying to get everything done in a week? It's very tough but so worth it! I love the fact that I can go back to my own recipes and make them again :) This one I made about a week ago. It's super easy and pretty healthy. Plus it is pretty filling for it just being veggies and sausage. Super easy, super delicious. Let me know if you make it and if you like it! I pulled the recipe from two different sites - HERE and HERE but ours is quite different. If you try all versions, let me know the pros/cons and which one you like better!

Ingredients:
- 6 tablespoons vegetable oil
- 1/2 tsp roasted garlic powder
- 1/3 cup Parmesan cheese, grated
- 3 large brown potatoes, chopped into smaller pieces
- A bunch of asparagus, cut in half
- 13oz smoked sausage link, cut into pieces
- 10 small baby carrots, cut into pieces
- 2 tsp Italian Seasoning

Directions:
Preheat oven to 400 degrees. Wash potatoes and cut into slices. In a small bowl, mix together all of the seasonings. Place the potatoes and carrots on the sheet pan. Drizzle vegetable oil and half the seasoning on top. Gently toss to combine and place in oven for 20 minutes.

                                       

Remove from oven and add sausage and asparagus. Add vegetable oil and remainder spices on top of the sausage and asparagus.  Cook for 10 more minutes until sausage is browned. Sprinkle Parmesan cheese on top as soon as they come out of the oven. You don't necessarily need extra sides for this dish, just enjoy as-is!



You can also add other vegetables to the tray and just top with vegetable oil and spices/seasonings.
