Chicken Broccoli Stir Fry

In case I haven't told you, my boyfriend is such an amazing cook. He always adds these extra touches to make meals even better than when I make them and I was lucky to enlist him last night to help me with Chicken Broccoli Stir Fry. This recipe is from Natasha's Kitchen and we changed up quite a bit of ingredients and measurements in both the stir fry and the sauce. We also doubled the recipe. Our version is below. 

Ingredients for the Chicken and Broccoli:
Two pounds chicken breast (3 of them) cut into 3/4" pieces
4 tbsp cooking oil
2 lb broccoli, cut into florets
1 tbsp onion powder

Ingredients for Sauce:
Two 2/3 cup of chicken broth
6 tbsp soy sauce
4 tbsp brown sugar, packed
2 tbsp cornstarch
2 tbsp sesame oil
2 tsp ground ginger
2 tsp garlic powder
1/2 tsp pepper


Directions:
In a small bowl, combine all the sauce ingredients and whisk to dissolve sugar and cornstarch. Set aside. 

Cut chicken into small bite-sized pieces and season with pepper. Heat a large cast-iron skillet on medium heat. Add 2 tbsp oil. Add chicken in a single layer and let sit for 1 minute to get a good sear. Stir fry for about 5-10 minutes or until golden brown. Move to a bowl with a loose cover to keep warm. 




In the same skillet, add another tbsp oil along with the broccoli and onion powder. Stir fry for 3 minutes and then reduce heat to medium/low. Give the sauce a quick stir and pour over vegetables. Simmer 3-4 minutes or until sauce is thickened. 



Return chicken to the pan and stir another 30 seconds or until heated through. Add sesame seeds and continue stirring if you would like. Serve with rice and cornbread.
