Ritz Cracker Chicken

Have you heard of Ritz Cracker Chicken? It sounds odd, right? Crushed up Ritz Crackers are actually used as the breading for this chicken recipe by Insanely Good Recipes HERE. This recipe has 6 ingredients and probably the easiest recipe you will make all year. 

Ingredients:
2 eggs, beaten
1 cup crushed Ritz crackers (put Ritz crackers in a measuring cup or a bag and then use a rolling pin or your hands to crush them)
1/2 tsp Salt Free Garlic and Herb seasoning by McCormick (this replaces garlic salt in the original recipe - we don't use salt often)
Ground pepper
4 boneless, skinless chicken breast halves
1/2 cup butter, cut into chunks

Place the eggs and the Ritz crackers in two separate bowls.


Preheat oven to 375 degrees. Add the garlic and herb seasoning and pepper to the Ritz crackers and stir. Spray a pan with non-stick spray. Dip the chicken in eggs until covered and then dip into the crumbs. Arrange the chicken on the pan and place butter around the chicken.  


Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for 10 more minutes. 


Serve with asparagus and mashed potatoes.
