Sticky Garlic Chicken Recipe

Happy football Sunday! Too bad my Broncos and Kevin's Colts are not going to playoffs this year :( 

With it being a new year - what are your new year's goals or resolutions? I have a lot of goals for myself this year but we are definitely going back to healthier recipes (after this one haha) and back to working out 1-3x per week. I ordered a treadmill that should be here by Friday (fingers crossed) and I'm more excited about that than the bike I've been using the past year. 

Anyways, last night we made this amazing sticky garlic chicken recipe from Sel Magique that can be found HERE. After this one, most of our recipes will be healthier (low sodium or made for kidney disease) so stay tuned. Although this one took awhile and had a lot of ingredients, it was SO worth it for these amazing sticky chicken tenders. If you make this, let me know what you think in the comments below! For the chicken, we added Mrs. Dash Chicken (Mrs. Dash is salt-free) and for the sauce we used garlic powder and ground ginger in place of garlic and ginger. We also did not use chili paste as we did not have any.

Ingredients for chicken:
1 1/2 lbs boneless, skinless chicken breasts, sliced into tenders/nuggets
1 cup buttermilk
1 cup panko breadcrumbs
1/4 cup cornmeal
1 tbsp olive oil
1 tbsp Mrs. Dash Chicken
Pepper to taste

Ingredients for sauce:
1 tbsp garlic powder
1 tbsp ground ginger
3/4 cup low sodium soy sauce
1/2 cup water
1/2 cup hoisin sauce
1 1/2 tbsp honey
1 tbsp white vinegar


Directions:
Line a baking sheet with aluminum foil and spray with cooking spray. Soak the chicken in the buttermilk. 

In a bowl, mix the panko, cornmeal, olive oil, Mrs. Dash and pepper. 

Preheat the oven to 450 degrees. Remove the chicken one piece at a time, let the buttermilk drip off and press into the panko mixture until coated. Place the chicken on the baking sheet and bake for 10 minutes. 

At 10 minutes, flip and bake for 10 more minutes. 

As your chicken bakes, add the sauce ingredients in a skillet on the stove over medium low and let it simmer for 10 minutes. 

When the chicken is done, use tongs and tip the chicken individually into the sauce mixture until covered and place back on the baking sheet. Bake another 5 minutes, re-dip in the sauce and let sit for a minute. Serve with broccoli and rice.
