Easy Chicken Fried Rice

As promised, here is another healthier recipe that was fairly easy to make. This recipe is from Fresenius Kidney Care and can be found HERE. The original recipe did not have chicken so we added that. We did not use scallions and used ground ginger and garlic powder instead of fresh ginger and minced garlic. If you make this, comment below. Ingredients:
3 tbsp vegetable oil
2 large eggs, beaten
2 tsp ground ginger
2 tsp garlic powder
2 cups (or one bag) frozen vegetables (thawed)
2 cups cooked brown rice
2 1/2 tbsp reduced sodium soy sauce
1 large chicken breast, cut into chunks

Directions:
Start with making the chicken first. Use 1 tbsp of vegetable oil and let it sit in a wok or skillet for a few minutes to get hot. Stir fry the chicken by adding the chicken chunks in the pan and stirring every 30 seconds for 5-8 minutes, or until brown. Move to a plate. 

In a bowl, add the eggs and whisk together. On high heat, add 1 tsp oil and add eggs, without stirring, for about 30 seconds. Flip and cook until just cooked, about 15 seconds. Transfer to a cutting board and cut into small pieces. 

Cook rice in microwave (we bought the 90 second rice) and let sit for a minute. 

Add 1 tbsp oil to wok along with ground ginger and garlic powder. Add vegetables cook about 4 minutes or until tender. Transfer to another plate. 

Add the remaining oil in the wok, add rice and stir about 1-2 minutes. 

Make sure it's cooked evenly. Return the chicken, vegetables, and eggs to wok. Add soy sauce and stir everything together.
