Bacon and Baked Potato Soup

I have made some potato soup recipes since then, but I have to say, this one I made a few nights ago takes the cake. This is a recipe from NW Kidney so it's a healthier version - although it's a longer version. It was so good and it will definitely be in the monthly recipe lineup. 

Ingredients:
5 medium sized potatoes 
1/3 cup flour
4 cups milk
1/2 tsp pepper
4oz reduced fat monterey jack cheese or parmesan
5 bacon strips, cooked and crumbled (not part of the original recipe)

Directions:
Poke holes in the bake potatoes with a fork. Place them on a pan and bake in the oven at 400 degrees for one hour. 

Let cool for 30-60 minutes. Cut lengthwise and scoop out pulp. In a separate large sauce pan, turn the stove to low and add the flour. Gradually add the milk, stirring until blended. 

Add potato pulp and pepper. Move to medium heat until it is thick and bubbly, stirring frequently. Add cheese and stir until melts. 

Remove from heat and top with bacon crumbles.
