Keto Chicken Parmesan Casserole

Most of my recipes tend to be leaning toward the Keto diet but I'm not strictly on Keto. My goal has been to eat low carb or healthier, especially when the gym isn't a priority. Last night we had Keto Chicken Parmesan Casserole. The original recipe can be found HERE (I like to give credit when due). I adjusted the recipe below based on our preferences. We also have another adult in the house so the food is typically gone every night instead of having leftovers which has been nice. Although this recipe I would not have minded having leftovers.

Tonight is another casserole so look for that blog coming soon. This casserole was fairly easy, and was all gone within minutes. ðŸ˜‹ðŸ˜‹

Ingredients:
-5 cups cubed chicken, cooked (about 3 boneless skinless chicken breasts)
-3/4 jar of marinara sauce
-1/2 teaspoon red pepper flakes
-1 cup shredded parmesan cheese
-1 1/2 cups shredded mozzarella cheese
-1/2 ounce pork rinds, crushed
-1/2 ounce tortilla strips, crushed
-1/2 teaspoon basil (seasoning)

Directions:
Preheat oven 350 and spray a square baking pan. Spread the cubed chicken in the dish and pour marinara sauce over. Sprinkle with red pepper flakes. Top with both cheeses. Lightly sprinkle the pork rinds, tortilla strips, and basil on top. Bake for 25 minutes.
